Meatless Gyoza Dumplings, Simple Folds, Perfect Crispy Bottom | Aromatic Sichuan Chilli Oil

  • Gyoza in Japanese, Jiao Zi in Chinese. Mandu in Korean. Potstickers in English. I don't think I had ever come across anyone who didn't like these dumplings. Fried and then steamed till the liquid in the pan runs dry, forming a nice crisp at the bottom, whilst retaining the chewiness of the skin on top.
    In this vegetarian recipe, I kept the ingredients minimal using only cooked bamboo shoots, chives and inari age and enhance the flavours with a special blend shio koji and dried shitake mushroom powder. The recipe ingredients are listed below.

    Dumpling Ingredients:
    175g pre-boiled bamboo shoot
    90g Inari Age
    25g chives
    1 tsp shitake mushroom powder
    80ml vegetable stock
    1 tbsp sunflower oil
    1 tbsp shio koji (homemade special blend)
    15 sheets large gyoza wrappers 10cm (4"") diameter
    1.5 tbsp aromatic oil for frying dumplings
    100-150ml water
    1 tsp sesame seed oil
    Sichuan Chilli Oil Ingredients:
    1 tbsp red chilli flakes
    0.5 tbsp sweet paprika
    1 tbsp green sichuan peppercorns
    0.5 tbsp toasted sesame seeds
    0.5 tsp salt
    1 tbsp sugar
    Aromatic oil - enough to submerge the chilli mixture.
    1 tsp black vinegar per serving
    soy sauce - optional for more saltiness
    Aromatic Oil Ingredients:
    400ml sunflower oil, or other neutral cooking oil
    45g scallion
    70g onion
    5g coriander roots
    5g sand ginger
    15g garlic
    1 small cinnamon stick
    3 cardamom
    2 star anise
    3 clove
    1 teaspoon fennel seeds
