Haitian Pineapple Upside Down Cake

- This cake brings back memories of when I was a child:)
For the Sauce:
1/4 cup butter
2/3 cups brown sugar
1 tbsp Babancourt rum (or any type of dark rum)
1 can of sliced pineapple
A couple of Maraschino cherries
For the cake:
1 1/2 cups of flour
1/4 tsp of salt
2 tsp of baking powder
1/4 cup shredded coconut
1/2 cup butter
1 egg
1 tsp vanilla extract
1 cup pineapple juice (reserved from can)
2 tbsp of rum
1/2 cup white sugar
Bake 350 degrees for 1hr
You may use a 9 inch round pan - Jak na to + styl

July 22 I made it for my sister it was really great except I change something instead of adding the pineapple juice I added milk and at the end I added simple syrup with pineapple juice together came out great that's another idea thank you you are very clear and I could understand everything other people's video you can never understand what they're talkin about the steps thank you so much JP from Miami

I just made this cake, it is amazing! The only thing I wish I would have done was be more careful with making the brown sugar syrup at the beginning. The cake is perfect, and not too sweet. I excluded the rum in cake batter because I did not want to make everyone drunk. However, I put 2 Tablespoons of rum in the syrup.
I put the rum in the cake batter as well. Soo.. good! 😋

I really like the rum addition. I once made a pineapple upside down cake from a mix. On the side of the mix box there was a recipe for a topping made from brown sugar, sour cream, and pecans. I just happened to have those ingredients on hand, so I made it. Talk about adding sin to sin! Tablespoon of rum would have probably worked well in the topping.

Barbancourt Rhum for once is Haitian. Also, the Haitian yellow cake mix tastes different from the American me. Try the recipe and you'll see...Something doesn't have to originate from a country for it to be made the way the people in that country makes it. She said Haitian because of what I previously wrote.
