      Donal, I find beating/slightly whipping the caramel makes it easier to spread and smoother consistency.

      For an extra depth in flavor add a small amount of coffee into the cream and it just makes it that tiny bit better

    I would layer the biscuit base with dark chocolate first and then the dulce followed by the banana and then a little dulce whipped cream. That's my version!

    I’ve first heard of banoffee pie from Kiera Knightly’s character in Love Actually and was never able to find it anywhere here in the States. I finally had it in London some years back and it was pretty amazing. I’m gonna have to give this recipe a try. 😋

    Oh I will have to make this for my 70th birthday! Growing up my favorite dessert was Mom's Chocolate Pudding Cake with a scoop of vanilla ice cream . You know the one where you pour hot water over then bake. It's the best!

    my dad was actually knew the guys who invented the banoffee pie, it was in the early 70's at the Hungry Monk in Jevington, just outside Brighton/Eastbourne on the south coast of England

    Dear Donal,
    Your banoffee pie looks wonderful. I have made this pie several times, and the one addition that I had learned to add was a coffee element. I learned that adding instant coffee to the cream gives a nice contrast of flavor that marries well with both the banana and toffee and also cuts through the sweetness a bit. I'm not sure if the coffee flavor was in the actual original recipe or not, but it does work well. Just my take on this delicious dessert.

    Banoffee pie is like one of my top 3 favourite desserts BUT somehow all I can think of now is that saucepan... I don't know why I find it so attractive. It looks like a mixing bowl with a handle. I want that.

    Does the cream melt away if not refridgerated? And how long does the cream hold up if refridgerated? I want to make it for my birthday the night before!!

      Make it up to the stage before adding bananas refrigerate overnight..before serving add sliced bananas ( if you do it too early bananas go brown) and add your whipped cream.
