    I live in Toronto, Ontario, Canada and my favourite restaurant chain here is called Bamiyan Kabob which is owned and operated by Afghani people. I discovered them by accident and their food is fantastic.

    I think all that cooking is done over wood fires. Love it. I’m sure that they could get propane if they wanted. I wonder why nobody seems to? Everybody just out living their life! Probably doesn’t change much day-to-day.

    Mereka kepasar belanja, meracik bimbu, memasak, menyajikan masakan. Kaum perrmpuannya duduk manis dirumah dan mengurudi urusan dapur internal.

    ### Ingredients:
    - 500 grams of liver (chicken, beef, or lamb), cleaned and cut into small pieces
    - 2 tablespoons oil or ghee
    - 2 medium onions, finely chopped
    - 2 tomatoes, finely chopped
    - 1 tablespoon ginger-garlic paste
    - 2-3 green chilies, slit (optional, for heat)
    - 1 teaspoon turmeric powder
    - 1 teaspoon red chili powder
    - 1 teaspoon coriander powder
    - 1 teaspoon cumin powder
    - 1/2 teaspoon garam masala
    - Salt to taste
    - Fresh coriander leaves, chopped (for garnish)
    ### Instructions:
    1. **Prepare the Liver:**
    - Wash the liver pieces thoroughly under running water. Pat them dry using a paper towel.
    2. **Marinate the Liver:**
    - In a bowl, mix the liver pieces with turmeric powder and a pinch of salt. Set aside for about 10-15 minutes.
    3. **Cooking the Liver:**
    - Heat oil or ghee in a large pan or skillet over medium heat.
    - Add the chopped onions and sauté until they turn golden brown.
    - Add the ginger-garlic paste and green chilies, and sauté for a couple of minutes until the raw smell disappears.
    - Add the chopped tomatoes and cook until they become soft and oil starts to separate from the mixture.
    - Add the marinated liver pieces to the pan.
    - Add red chili powder, coriander powder, cumin powder, and salt to taste.
    - Mix well and cook for about 10-12 minutes, stirring occasionally, until the liver is cooked through. Liver cooks quickly, so be careful not to overcook it, as it can become tough and dry.
    - Once the liver is cooked, sprinkle garam masala over it and mix well.
    - Cook for another 2 minutes and then turn off the heat.
    4. **Garnish and Serve:**
    - Garnish with chopped fresh coriander leaves.
    - Serve hot with rice, roti, or naan.
