Start with the video on how to temper chocolate and then the vid on what chocolate to use - then once you've done that have fun with any of the decorations in chocolate decorations part 1 video, the first one the spikes being the easiest.     Hi nilekhapatil the chocolate transfer sheets are at some cake decorating store and I got mine on ebay. The plain acetate sheets can be found at cake decorating stores or art stores.

    Hi Wendy, number one has chocolate glaze over the top (recipe on the blog) the thin stripe of chocolate is going directly onto the cheesecake, the cuff could just go around the cheesecake, but I have glazed the top of this cheesecake.

    Hi alleycat3552, the patterns are made out of coloured cocoa butter, you can make your own but it would be difficult to make such fine patterns. You can also order custom printed ones if you order bulk so you could have your name on it for a party.

    I worked as a public health dietitian (area wide policies and programs with schools and hospitals), a community dietitian (with outpatients) and as a private consultant dietitian for a food company all of which were great jobs. I then resigned to work as a youth pastor. A good idea is to look at the jobs advertised in your area in the last 30 days and see what is available. Where I am it was highly competitive to get a job and many graduates missed out and had to work in other fields.

    yes they were 2.50 each plus 3.50 shipping for the first one and 10c shipping for any additional sheets - so it was more economical the more you buy. Seller was lljj-forever they post to usa and australia so if you are elsewhere perhaps send them a msg and ask if they will post there too.

    Then I would consider what part of being a dietitian do you think you'd like? Clinical - ie in hospitals is usually one of the hardest to get a job in, so if you did not land a job would you be happy doing one of the other dietetic areas or in a nursing home? If not and you really want to work at a hospital then are there other allied health jobs that have more openings like physio, speech pathology that you would like to do? The bigger the department the more jobs will be going

    I just looked up chicago IL and dietitians jobs in the last 30 days there has been 87 jobs advertised, chicago has a population of 2.7mill, so that is similar to Perth where I graduated which has a population of 2.1 million - and in the last 30 days there 0 jobs for dietitians advertised. So there are a lot more jobs where you are. Do you know how many new grads there are each year?

    Hi Ann, this video is amazing and I love working with chocolate! When I met Christy Tania from dessert bar Om Nom she was telling me that it's really easy to make your own chocolate transfer sheets! I know that you use acetate and just draw on it with cocoa butter, but I was wondering if you knew how to colour cocoa butter? I know that you can buy pre coloured cocoa butter but I already have heaps of normal cocoa butter. Or is there another way to draw on the acetate to make sheets like in your video? I've been googling trying to find an answer for so long and I just don't know what to do! I've tried colouring the cocoa butter with normal liquid food colouring but it just splits. Sorry for making this so long. I absolutely love watching your videos and your so inspiring. I'm an apprentice chef and I hope one day I can create amazing food like you! It would mean the world to me if you could reply and hopefully give me an answer, love Madi xx

      Ann mentioned this in her chocolate truffles part 3 when she used coloured cocoa butter in the truffle moulds. She says if you can't find any pre coloured then you should used an oil based powdered food colouring. I think you can find that at any cake decorating store but any extra liquid would make the cocoa butter seize. That's why she recommends powdered (and oil based aka. most food colours are water based so try to find an oil based one instead) food colour. Hope this helps xx
