What they use from the agave is closer to an artichoke's heart, is not the roots, those are cut and left in the ground :)

The amount of alcohol is the same in silver and aged ones, is the taste and feeling what changes :) and benefit per se not really, but because of the kinds of sugar that agave possess is the only kind of alcoholic drink approved for diabetics
