Braised Spanish Octopus with Vinegar-Infused Fried Potatoes Deserves a Good Wine

- In this week’s episode of Tasting Notes, Pearl & Ash’s Executive Chef Trae Basore shows Rebelle’s wine director Patrick Cappiello how to make Spanish octopus with andouille, vinegar potatoes and cilantro. As the perfect complement, Patrick selects a northern Italian wine from producer Burlotto made from a grape called Freisa-an ancient varietal known for being light and bodied, with a little bit of spice and good acid to combat the fat in the octopus.

It's written "nduja", and spelled "nduia". It's from Calabria, Southern Italy. "Andouille" sounds so french to me lol
(I'm italian, from Calabria, so i know what i'm talking about ;) )
I'm French and andouille comes from France that's why it sounds French haha. I know all over Europe different countries have their own version as well though just like where you are from! Andouille can be found in restaurants in the US as it was brought to Louisiana by the French immigrants. :)

Spanish Octopus must be paired with Albariño always! And besides this is not Spanish at all wrong condiments and we use parsley not cilantro
