  • Currywurst unties all Germans, no matter if they live in the North or in Bavaria. It's the "go to food" when you are in a hurry or when you need to treat yourself or your soul. It is a sort of culinaty exemption in the German Food preparation because for onve we use a lot of different spices from different countries.
    Currywurst was invented shortly after WWII and some of the ingredients like Waorcestershire Sauce came with the British soldiert. Other ingredients might have been introfuced by American soldiers, who knows?
    It has become a cult food all over Germany and the original Currywurst Sauce recipe is a secret of the family of the inventor. A lot of people try to recreate it and this currywurst recipe appears to me to come really close to the original.

    I was stationed north of Frankfurt in the 70's while in the army. My best food memory was currywurst from a street vendor. haven't this sense 1979. Will give a try. thanks

    Currywurst brings back memories when I was stationed in Fulda in FRG with 11th ACR as a medic from 1979 to 1982. I have to try to make your curry sauce. I also have to try out your method of preparing the bratwursts with the little cuts before frying. Sound delicious. 😋

      I was there 82-85 in 58th cec, loved going to snack shack and getting the curry bratwurst and pomfret’s also there half chicken.

    Looks good! I want to share a tomato paste hint. Open both ends of the can, remove one cut top, & push the other top thru the can. You get all the paste without the mess.

      Awesome hint! Thank you! In Germany, our tomato paste comes in tubes but I think also in little cans. I've never heard of this method but will try it next time!

    Here in Yakima, Wash., USA, there's a sandwich it shop that serves Currywurst dogs. The sauce is great and the "German" sausage is good. Serving it on a roll with chopped onions actually works. I've shared your video with a Facebook group of 200 veterans who served at an outstation on the East German border in the late '60s. They love it.

    Fantastic!!! I really miss great German food and your videos have inspired me to try and make it myself. Currywurst was one of the first lunches I has when I was in the first week of being stationed in Pirmasens. There was a little imbiß right outside the gate that was packed at lunchtime. The owner used to make his own sauce and it was excellent.
    Thank you for posting this!!! I'm really going to try your recipe and let you know how it turned out. They are opening an Aldi in my neighborhood soon too...excited about that!!

      I‘d love to hear what you think! Everybody cooks his or her own version of the sauce but I think the variations don‘t differ too much. Like, I am using apple cider vinegar and someone else is using apple sauce and white wine vinegar instead. I‘m curious if my sauce tastes like the one you had in Pirmasens.

    I just made the sauce. I took out the star of anise and used an immersion blender. That thickens it quite a bit and I only added 1 can of tomato paste. The tomato paste also reduced the heat a bit. It tastes pretty good, I'll try with some wurst for lunch.

    Wunderbar! My wife came home from Aldi's today with 4 packages of Brautwurst (they were on sale) . We usually boil them in beer, onions and a few spices and finish them on the grill. But I have heard of Currywurst and your recipe looks amazing so we will try it. Thank you for sharing your cooking videos.

      Funny typo, you wrote "Bride Sausage".
      The curry sauce was created in West Berlin in the end of the 1940's and the curry was mixed from different spices.
      In East Berlin Konnopke found a way to make a curry sauce and this is one of the most authentic.
      Pretty often they simply use Ketchup and curry powder, but it's the worst way.

    Well done Frau Barbara, this recipe looks marvellous and reminds me of the many times I visited your homeland and stood at a Shnell Imbiss stand - they also have curry wurst in Austria! Worcestershire Sauce is pronounced woostershire but we often just call it wooster sauce in Alt England.

    I had these in Germany. There was a stand just outside the hospital in Wiesbaden. Since I was stationed in Italy, i didn’t have a clue what to order and i thought “Hot Dog in ketchup” seemed safe. One bite and I knew it wasn’t a Hot Dog in ketchup and I tried to get it whenever I was back. I so wanted to be stationed in Germany. The stand was the first thing I would look for after the nurse checked me in.

      I am sure the food in Italy wasn’t too bad either? I heard from a friend that patients in hospital get served wine in Italy. But yes, I’d always chose Currywurst over wine 😆

      In the 1980's East Germany made an own Hot Dog with a fluffy Hot Dog bun plus a sausage, that was dipped in Ketchup. Called Kettwurst.
      Same time they also made a special burger, minced pork, stable roll, mushroom sauce or bell pepper sauce, a good portion, it was called Grillette. And the reason for creating this, was pretty similar to the first Hamburg sandwich. They had problems to provide food to the tourists in East Berlin and needed some solutions, that they get a snack and both were fast and easy prepared.

    This recipe looks off the chain, yo! Can't wait to do it at my house. Had you considered usding a food mill with a fine plate to get more of your tomato pulp into your sauce? That would leave the spice pieces behind and bulk up your liquor without resorting to paste and altering your flavor profile.

    Interessant! In Franken ist die Sosse eher ne ketchup Sosse mit Curry. So hab ich das tatsächlich noch nie gegessen. Auch die Wurst is anders. Eher ne knackwurst, wie ne Wiener Wurst nur Größer. Liebe Grüße aus Texas

      Back in my days we started learning English from grade 5. Nowadays they start in 3rd grade to improve pronunciation. I also spent time in Ireland in my summer break as a teenager and that helped a lot.

    I was in Frankfurt for 3.5 years. Watched how they made Curyy Wurst at a Schnell Imbiss I vidited regularly. They just put curry 0owdrt in ketchup and simmered it for awhile. That was ok but can't wait to try this authentic version.

      In times of cold war, all people simply put the curry powder into the ketchup, except Konnopke, they had a special recipe, they found it by analyzing a curry sauce sample from West Berlin, it was before August 1961, where it was pretty easy to change between both parts of Berlin.

    Could you add a thickener like arrowroot instead of another can of tomato paste? The paste will change the ratio of spices. I want to make this & I’ll try Arrowroot & see, luckily I have an Aldi’s not to far away. Brats from them will be good, thanks!

    Why didn't you just simmer the sauce till it reduced down and liquified more before putting it through the sieve? I'm thinking it would have been the right consistency if you did and you may not have needed the tomato paste.

    Instead of straining the sauce could you not just take the stars out and blitz the sauce then boil to thicken just seem a waste to throw away what is left over?

      It‘s just called „Bratwurst“ and I got it at Aldi. But every American Brats should do it. Just don‘t use this sauce with Weißwurst. It‘s often packaged similarly to this package. Weißwurst is some kind if exemptions when it comes to how to eat it. There is an article about that on my blog.

      Yes, that is what throws me off. Sausage packing seems different between Germany and US. Texture and shapes. I’ll have to make sure not to use it on Weißwurst.

      I mention that in the recipe on the blog "The remaining sauce will last in a clean, closed container in the fridge for several weeks." Our curry sauce usually is completely used within two weeks though :-)

    Das Rezept auf deiner Hpmepage ist ein anderes als dies hier. Hast du es im Laufe der Jahre angepasst? Ich war schon ein wenig erstaunt wie viel Apfelessig du im Video verwendet hast. Übrigens, der Pommes Män aus Deutschland hat dein Rezept vor 3 Jahren nachgemacht :). Vielen Dank für deine Antwort.

      Hallöli. So ganz kann ich den Kommentar nicht nachvollziehen. Die Abweichungen vom Rezept hier und auf Barbaras Blog sind marginal, z. B. bei der Lea & Perrins statt 1 EL 4 TL. Da 1 EL 15 ml und ein TL 5 ml hat ist der Unterschied ein Teelöffel. Das ist m. M. n. Geschmackssache. Beim Essig sind es hier 1 cup, im Rezept 250 ml. Auch da ist der Unterschied lediglich 13 ml, also nicht wirklich merkbar.
      Übrigens hat der Pommes Män das Rezept schon vor 8 Jahren veröffentlicht und vor drei Jahren erneut und leicht verändert hochgeladen.
      Barbara schreibt das auch auf ihrer Seite, Zitat: "The one that I share with you here, is from a video channel from Pommes Män, so credit goes to him.".
      Aber das alles ist eigentlich egal, Hauptsache es schmeckt. Und das tut es, probiere es unbedingt mal aus.

      @@roynoi4662 Oh, no offense. Ich habe das nicht als Vorwurf gemeint, lediglich als Hinweis. Aber ja, der Viertelliter Essig ist so schon korrekt. Hier heißt es "1 cup" und im Rezept (bei metrischen Werten) 250 ml. Ein "cup" sind doch aber 237 ml, da ist das doch nur eine Rundungsdifferenz.
      Oder habe ich Dich da völlig missverstanden? Geht es um die doch recht große Menge, unabhängig vom Rezept? Da muss ich Dir Recht geben, der Pommes Män nimmt nur ein Viertel der Menge, also 75 ml. Auch bei den Gewürzen ist er zurückhaltender, die Hälfte Zucker, die Hälfte Zimt, ein Viertel Worchestershiresauce und auch viel weniger Curry-Pulver (dafür aber Madras, das ist etwas kräftiger). Das stimmt zumindest für das aktuell bei ihm veröffentlichte Rezept.
      Aber das hat mir keine Ruhe gelassen und daher habe ich eben nochmals nachgeschaut: In seiner ersten Version (8 Jahre alt) hat er die Sauce genau so gemacht, wie Barbara es hier zeigt (5 Jahre alt). Erst mit seiner neueren Version (3 Jahre alt) hat er sein Rezept abgewandelt.
      Hmmm, ich finde, da hat Barbara es vor fünf Jahren doch richtig gemacht, oder? War halt damaliger Wissensstand. Und schmeckt. Die neue Version habe ich noch gar nicht ausprobiert, muss ich unbedingt mal machen. Oder besser gleich beide Versionen und dann vergleichen.

      In my church was an American missionary and he loves potato pan cakes. But I doesn't like it.
      In his hometown they have a German bakery, so he wasn't so extremely impressed by the German bread, as other Americans.

      I was actually thinking the same thing and I might try it next time. I would even consider to do it the same way and to just take out the star anise. It might be a little to much onions, though. I‘m a little worried that they take over too much. But definitely worth a try. If you do it before I (since I have a jar of that sauce right now), I‘d be curious to know how it tastes.

      I’m using Avocado oil for many years now, I get it at Aldi and other grocery’s here innTexas. I like it very much since it has no flavor but is healthy as olive oil if not even healthier.

    Brown Sugar is not available in Germany, at least not in Bavaria. I made my own with white sugar and molasses.

      I‘m surprised to read this. I‘ve never had trouble to find brown sugar in Germany, a lot of recipes need it. Maybe check some other groceries for it. Did your mix work?

      @@MyGermanRecipes We lived in Bavaria for 2 years 2014 to 2016. There was no Brown Sugar available anywhere. I was warned by a friend who lived there that Brown Sugar was not available and we never found it .Yes, my homemade brown sugar was perfect! 1 Tbsp Molasses to 1 cup of sugar.

    I never trust an American where food is concerned. The sausage is extremely important for a currywurst and what you have there is a Bavarian style bratwurst. Also, you seem to throw away all the goodness from the sauce. Instead of using a strainer it would be best to let it all cool down a bit and then put the sauce into a food processor, that way you won't have any or very little waste.
