One thing you probably won't notice right away about Vietnamese cuisine is that there's not really a great distinction between surf (seafood) and turf (beef, chicken, pork, & etc.) For example, the pork chop in the video is marinated with fish sauce before being grilled and fish sauce itself is basically a pure clarified extraction of fermented anchovies. As another example, you'll see fish sauce and fermented shrimp paste used in bun bo hue, but also the addition of things like beef shank and blood sausage made from pork blood. It's a different concept from something like surf & turf in America, where steak is just put on the same plate with something like grilled shrimp. In Vietnam, they're not afraid to blend to together flavors from both land and sea to create simple, yet complex flavors with an emphasis on balance, texture contrast, and freshness.

Love your parents. Explain to them that Nước Mắm at the table is already mixed, not raw stinky fish sauce. Every home we make mixed nuoc mam and stored in refrig for months. You can mix yourself at home: For every 1 TBS nuoc mam , add 3 TBS warm water, 1/5 tsp lemon juice , 1/3 tsp vinegar , 1 tsp sugar, ground hot red pepper of your like. Just add up to amt you want to eat . That's all, add lemon juice or sugar if you like. At the end, you can adjust more salty taste by adding more fish sauce or less at your taste.

I officially a fan of your dad 😂😂. As vietnamese born and raised, I never use fish sauce that come with Cơm tấm. I always think the grill meat has enough flavor for the whole dish.
And it would make it too salty. I assume there is already nuoc mam in the meat marinade.
Com tam without sweet fish sauce is TASTELESS. That's why NO place serves Com tam without fish sauce.
The pork chop is flavored, but the rice isn't. The fish sauce is to give the rice and other sides more flavor and to balance out the sour of the pickled veggies that usually comes with com tam.

@@musicful7036 It's like eating bun thit nuong or anything else without fish sauce...why? The fish sauce it made to accompany and enhance the flavor. It's up to you how much fish sauce you want in it, but I'm like Dustin, I toss the whole bowl into whatever meal comes with a side of fish sauce like that.

Bitter melon soup is healthy. You can cook it with shrimp instead of pork. The greener the melon, its less bitter than yellow one

The way they marinated the pork is salt, pepper, garlic, condense milk, five spice powder, chicken flavor soup base mix powder, chilly powder, mix them well and let them sit for 2 hours and grill.
