Making of Newari Dish 'Sanya Khuna' (सन्या खुना)

  • Sanya khuna (Newari: सन्या खुना) is a special type of jelly-like food prepared and consumed primarily by the Newar community of Nepal.
    Buffalo Leg Stew and gelatinous skin with meat attached is preferred to make sanya khuna. Meat boiled for very long time and later spices are added. Juice of a Key Lime fruit (Jhamsi in newari) which taste like lemon but with a flavor of mandarin is added for more flavor. Finally smoked dry anchovy fish is fried and added. It is cooled down to make a meat aspic jelly which is called 'Sanya Khuna'
    Sanya means dried fish and Khuna means broth.
    Usually consumed Spicy and Sour, we need chilly and Key lime juice to be added little high quantity and others to our taste. In Nepali language widely know as 'Thalthale'.
