You Won't Taste the Zucchini in This Chocolate Cake

  • This chocolate zucchini cake is so chocolatey, so moist, and so flavorful, you’ll never taste the zucchini! I top mine with a chocolate cream cheese frosting that’s simple and not-too-sweet.

    Ingredients
    For Cake
    2 cups all-purpose flour (250g)
    1 cup granulated sugar (200g)
    1 cup light brown sugar, firmly packed (200g)
    1 ½ teaspoons baking soda
    ½ teaspoon table salt
    ½ cup natural cocoa powder (50g)
    ½ cup steaming hot or boiling water (118ml)
    10 Tablespoons melted butter (141g)
    1 cup sour cream (240g)
    2 large eggs, lightly beaten
    2 teaspoons vanilla extract
    1 ½ cups shredded zucchini - patted dry with a paper towel (200g before drying)
    For Frosting
    8 oz cream cheese, softened (226g)
    ½ cup unsalted butter, softened (113g)
    2 ½ cups powdered sugar (315g)
    ⅓ cup cocoa powder (35g)
    ¾ teaspoon vanilla extract
    ⅛ teaspoon table salt
    2 Tablespoons mini chocolate chips for topping, optional

    Instructions
    00:00 Introduction
    For Cake
    00:37 Preheat oven to 350F (175C) and lightly grease a 9x13 baking dish with butter.
    01:46 In a large mixing bowl, whisk together flour, sugars, baking soda, and salt until well-combined.
    02:15 Pour cocoa powder into a separate, heatproof mixing bowl and then pour hot/boiling water overtop. Whisk until smooth.
    02:52 Add butter and whisk until combined.
    03:23 Add sour cream, egg, and vanilla extract and whisk well.
    04:12 Add dry ingredients to the wet and use a spatula to gently fold ingredients together until about halfway combined. Add zucchini and continue to stir until ingredients are well incorporated and batter is uniform - do not overmix or cake will be dense and dry.
    05:09 Spread batter evenly into prepared pan and transfer to center rack of 350F (175C) oven and bake for 33-35 minutes and until a toothpick inserted in center comes out clean or with moist crumbs. Allow cake to cool completely before covering with frosting.
    For Frosting
    05:53 Combine cream cheese and butter in a mixing bowl and stir until smooth and creamy. Gradually add powdered sugar and stir until combined.
    07:05 Stir in cocoa powder.
    07:14 Add vanilla extract and salt and stir until smooth and well combined.
    07:50 Spread frosting evenly over cooled cake (I ice it directly in the pan) then sprinkle with mini chocolate chips for decoration. Slice and enjoy.

    Storing
    Cover with foil or plastic wrap and store at room temperature for up to 24 hours or in the refrigerator for up to 5 days. Cake may also be frozen for several months.

    When I was pregnant with my 3rd child (over 15 yrs ago) I craved Zucchini ... & put it in almost EVERYTHING! & didn't tell my family... the chocolate cake I made was soooo good... I've since lost that recipe & I've been in looking for it again! So I'll definitely need to try this .

    Working as a baker in school food service back when WE actually cooked all the food the majority from old-fashioned scratch, we hid fruits & veggies in all kinds of foods. Canned purple plums in our chocolate cake. Fig nuggets in sugar cookies which came out almost like toffee chips, and sweet potatoes in our "pilgrim" rolls which was everyone's absolute favorite. It was a creative way to use up commodity products and the kids never knew.

    I’ve boldly used cucumber (due to the unexpected substantial amount growing in our summer garden) to make cinnamon muffins and it worked and was surprisingly delish. I’ve played with crookneck squash and that worked well for chocolate muffins too. Thanks for another wonderful recipe!!!

    Thank you for explaining the blotting of the zucchini to remove moisture. So many recipes don't discuss and I think that is why I have not had success on other recipes.

    I’ve used a similar recipe for years, it makes a super good chocolate cake, you can grate zucchini and freeze in 1 1/2 cup portions, or whatever the recipe needs, then you can make it up throughout the year!! Fun!! Zucchini bread with chocolate chips is amazing also!!

    I am making this recipe for the fouth time! I used the hand mixer to combine the wet ingredients. It was moist and soft.

    This was the best chocolate cake I ever made, moist and so flavourful, thank you!! And your instructions are very helpful throughout, even for a beginner like me! I however used a lot less sugar, 1.3 cup total for the batter, increased 320 g zucchini + 2 large dates to increase volume and moisture, and took only 3\4 cup sugar for the frosting. And the cake turned out more than plenty sweet for me. Thanks again, and all the best!

    My neighbor gives me zucchini from her garden every year, so I'm definitely going to try this! I don't think you should be able to taste the zucchini. The frosting looks delicious!

    Thank you very much! I make Zucchini cakes all the time. Love them! I usually strain the Zucchini over night. I use also your recipe of the Carrot cake with Zucchini instead of Carrots. Yummy!

    good idea using both blades... I just shredded mine yesterday, but did not use the second blade, will have to go back and do that to hide the zucchini since most people won't try a food if it has something "different" in it. I found using a salad spinner is easy to remove the extra fluids. I will be making this in a couple of days. Also using instant coffee is a great idea. I found you today looking for ideas using cookie sheet for baking for a crowd. Will cook the Zucchini cake using the cookie sheet. Hopefully it turns out well.     Zucchini bread/cake is not a thing here in Hong Kong. I once made it and had my family guess what vegetable was in it. I had a lot of fun hearing their answers, which included broccoli.🤣🤣🤣
    To me the point in adding courgette is to add moisture and, maybe, to trick veggie haters into eating veggies. That's why I don't think it should come through.

    Zucchini in the cake , I could do that, and thinking choc chips as well in case of kids wondering what those bits are. I have made a cake with beets in it, and you could tell it was different, but the chocolate loving kids didn't spot it. But still would not add the coffee. love the simplicity of the icing.

    NO NO NO!!! Baked goods made with zucchini, or any other vegetable hidden inside, should not taste like zucchini! It should taste like whatever the main flavor is, whether it's chocolate, spice or whatever. I've made zucchini bread and received rave reviews for it, but nobody knew there was zucchini in it. We need to sometimes sneak those veggies into the foods we make so people who claim not to like veggies will eat it and enjoy it.
