Respect that you keep it all default blender and no Booleans! Have you ever modeled an historical helmet with some cheek guards? I found it very tricky to achieve their shape and curvature, for the cheek guards that is. I'll provide a model from sketchfab as reference if you are interested in doing a video. It's a very beautiful helmet as well

PS: I'm using Blender 2.78c and I don't see how you can replicate the step you made at 8:00 - = shift + b while inset does not make any change in my case. I had to dissolve edges, but, I'm wondering if this is correct.

how do i extrude when i have the subdivizion on???
I recommend to turn the subdivision off while you're in edit mode. I usually keep it on only when I'm in Object Mode.
