Murgir Laal Jhol-a fiery red Bengali chicken curry

  • Murgir jhol or Bengali chicken curry recipe: Jhol refers to the runniest form of sauce in Bengali cooking. This chicken curry recipe is all about freshness of ingredients. It does away with everything but the essential. There is no tempering the oil with whole spices, no tomatoes and green chillies, none of the usual spices such as coriander and cumin, and no garnishing with coriander leaves. Which means that the few ingredients that do go in have to be fresh if you would like to achieve the best results.
    Ideally, the chicken should be purchased from the market the same day, never frozen. The whole bird should not weigh more than 2 kg, about 1.7 kg after dressing. The meat should be bone-in, of course, preferably from the legs and thighs and not only from the breast. Necks, stomachs, livers and heads are good too.
    The chilli paste is freshly ground along with a generous quantity of garlic and a little ginger. The quantity of onions is much less than what would be normally used. This is intentional. Avoid the temptation to use too much onion in this recipe. Because there is not enough onions or spices to give the gravy a body, when the water is added the emulsion breaks and the oil rises to the top giving it its signature red colour.
    The yoghurt adds some acidity, but can be skipped too. The whole spices used are ground fresh in a sheel nora right before being added to the korai at the very end. The effect is very different from adding whole spices in the beginning of the cooking process. Finally, we like to finish with a drizzle of a good pungent, unrefined mustard oil. This is an optional step, but one we recommend you try at least once.‍

    I just cooked this curry and had my dinner with roti and rice... I'm from Andhra.... Trust me this is the most delicious curry I have ever tasted.... It go so good with both rice and roti... Bengali cuisine has most delicious food and they know how to cook food tasty!

    I like fiery Bengali food. Terribly miss my neighbour's food. She and her husband were excellent cooks. Not only their food, I also miss their beautiful daughter who was my classmate. Fell in love with her but I couldn't muster enough courage to tell her about my feelings for her 😁 Still misses her to this day.
    She is married now and lives in Bern, Switzerland.

    I do know most of the recipes that you shown through my ma, baba, dida and extended family..... I tell ma "ei channel e amader moto ranna hoy"..... and so I don't come here primarily to learn cooking..... what I do come here for is to appreciate the art of cooking.... Thank you.... amar ekta suggestion/ request ache.... if at some point you could introduce the audience who are not essentially familiar with the food...... to the history behind the recipe that would be wonderful....

    Tried it today
    As a Bangladeshi, i can say it was one of the best chicken alur jhol
    It was veryyyy good
    Skipped yoghurt and cooked with soyabean oil instead of mustard oil
    Worth it

    I have been cooking Bengali curries for a few years now and tried this recipe today; Murgir Laal Jhol stands out above all the other curries I have made.     My "baromaa" used to make this on any occasion like bhaiphonta,janmodin etc. .... never,ever had that awesome taste n flavor anywhere except her hands in my life.this video made me nostalgic,how i wish i could go back to those golden childhood days where all of the family used to sit on rows of chador or satoranchi and devour in the heavenly jhol with 'dhonya-otha' sada bhaat .....aahhhh those were the days ❤

    I made this dish today. I followed the instructions faithfully and it was delicious. I particularly like the pungent hit of mustard oil in each bite. I am not Bengali so I rarely use raw mustard oil (I do cook with mustard oil though) in my cooking so it was a revelation. As usual the instructions were very clear and I didn't even have to refer to the video while making the dish. Thanks guys. Hope you are well.

    I tried this recipe yesterday and the smell took me many years back to my childhood. My dida's kitchen used to smell exactly like this. At the end of her cooking session, she would also smell a little like that. I was too young to realize the source then but now I know it was the katcha gorom moshla bata. Will be incorporating it in more recipes. Smell can have such powerful associations.
    Recipe as always was perfect.

    I was pretty fascinated by the color of the gravy as me and my family love super spicy food. Just did two replacements used buttermilk instead of yoghurt as I didn't have the latter. And extra helping of red chilli powder, as we wanted extra hint of spice. It was so wholesome and tasty!❤️❤️
