Murgir Laal Jhol-a fiery red Bengali chicken curry

- Murgir jhol or Bengali chicken curry recipe: Jhol refers to the runniest form of sauce in Bengali cooking. This chicken curry recipe is all about freshness of ingredients. It does away with everything but the essential. There is no tempering the oil with whole spices, no tomatoes and green chillies, none of the usual spices such as coriander and cumin, and no garnishing with coriander leaves. Which means that the few ingredients that do go in have to be fresh if you would like to achieve the best results.
Ideally, the chicken should be purchased from the market the same day, never frozen. The whole bird should not weigh more than 2 kg, about 1.7 kg after dressing. The meat should be bone-in, of course, preferably from the legs and thighs and not only from the breast. Necks, stomachs, livers and heads are good too.
The chilli paste is freshly ground along with a generous quantity of garlic and a little ginger. The quantity of onions is much less than what would be normally used. This is intentional. Avoid the temptation to use too much onion in this recipe. Because there is not enough onions or spices to give the gravy a body, when the water is added the emulsion breaks and the oil rises to the top giving it its signature red colour.
The yoghurt adds some acidity, but can be skipped too. The whole spices used are ground fresh in a sheel nora right before being added to the korai at the very end. The effect is very different from adding whole spices in the beginning of the cooking process. Finally, we like to finish with a drizzle of a good pungent, unrefined mustard oil. This is an optional step, but one we recommend you try at least once.

I just cooked this curry and had my dinner with roti and rice... I'm from Andhra.... Trust me this is the most delicious curry I have ever tasted.... It go so good with both rice and roti... Bengali cuisine has most delicious food and they know how to cook food tasty!
I like fiery Bengali food. Terribly miss my neighbour's food. She and her husband were excellent cooks. Not only their food, I also miss their beautiful daughter who was my classmate. Fell in love with her but I couldn't muster enough courage to tell her about my feelings for her 😁 Still misses her to this day.
She is married now and lives in Bern, Switzerland.
Bengalis' obsession for potatoes is as interesting as south indians' obsession with coconuts :)
ramesh MS As a Bengali who has lived in both places, I agree and wholeheartedly approve of both 😊
We do have coconut in some of our most celebrated recipes such as coconut-prawn curry (chingri malaicurry), puli pithe (a dessert made of rice batter and coconut) and more
and to think that potatoes only came in with the Potruguese shows that its a very recent development into our Indian cuisine.
The AI Lad and tomatoes as well.

Tried it today
As a Bangladeshi, i can say it was one of the best chicken alur jhol
It was veryyyy good
Skipped yoghurt and cooked with soyabean oil instead of mustard oil
Worth it
Could not restrain myself,
hence commenting. Watching you cook, like a artist is on canvas.
Par excellence. Thanks.
I have been cooking Bengali curries for a few years now and tried this recipe today; Murgir Laal Jhol stands out above all the other curries I have made. The flavour of the raw mustard oil as the final garnish was the key to this dish. This is food for the soul! Thank you Bong Eats for sharing your Bengali cooking repertoire with us.
I was just wondering how to cook chicken curry for Sunday lunch n your notification popped.. Much needed recipe before Sunday lunch 😊 Thank you so much 🤗
When i went to tution batch...at Sunday..12:30 pm ..
I also didn't hear sir's suggetions..in tution batch..I also thouht about"মাংসের ঝোলটা কেমন হয়েছে? কখন পড়া শেষ হবে আর আমি বাড়ি গিয়ে খাবো..."
I have watched many cooking channels in CZcams though in your channel I find some kind of peace and aroma for food which really inspires me to try it as me being not a cooking friendly person. I really like the way you show and that chopping, measures & ingredients detailing. Thank You!
I tried the recipe today, only difference being kashimiri Mitch powder instead of chillies (looked but didn't find them around my place). It turned out delicious. Thanks guys
It’s amazing how it uses the least spices and yet tastes and looks amazing.
Thnx a lot guys
Guys I tried this tonight for dinner. It turned out so perfect to have on a rainy night like this with gorom bhaat. I slow cooked the entire recipe for near about an hour.
Omg i so happy you starred giving recipe again. We are your fans always get super excited wherever get a notification form u..
Lods of love from assam
My "baromaa" used to make this on any occasion like bhaiphonta, janmodin etc. .... never, ever had that awesome taste n flavor anywhere except her hands in my life.this video made me nostalgic, how i wish i could go back to those golden childhood days where all of the family used to sit on rows of chador or satoranchi and devour in the heavenly jhol with 'dhonya-otha' sada bhaat .....aahhhh those were the days ❤
I tried this today. My mother looked so happy... She is a super chef.but she smiled on tasting my food. Thank you so much
I made this dish today. I followed the instructions faithfully and it was delicious. I particularly like the pungent hit of mustard oil in each bite. I am not Bengali so I rarely use raw mustard oil (I do cook with mustard oil though) in my cooking so it was a revelation. As usual the instructions were very clear and I didn't even have to refer to the video while making the dish. Thanks guys. Hope you are well.
Honestly in this lockdown I started learning cooking just bcoz of your channel😌
Nice
Actually in your cooking skill , there is something special nostalgic touch of pure bengali
I made this…too awesome! One of the recipes where you don’t have a whole lot of spices yet it tastes like it has everything…unique!! Loved it!!
Tried it just now, came out amazingly tasty. Reminds me of my childhood memories of chicken curry. Just added a pinch of black pepper at the end with fresh garom masala. Thank you so much for this super tasty recipe with minimal ingredients.
When I saw this video in the recommendation, I thought that it is one of the older videos and didn't click on it. Only when I saw the date did I realize that BongEats is probably back with more visual treats! Really happy to see you guys back with recepies. Keep up the good work!
I cooked this for dinner today. And oh my god!!! It's so simple and turned out so so so tasty. 😍😍😍😍😍 I added ghee along with mustard oil. It was so so satisfying. Thank you for this simple yet delish recipe. 😍😍😍
The perfect recipe! Made it several times, yet couldn’t get enough of it!! 😋
Prepared this today and it turned out exactly like you have shown here. Hats off to you guys!!!
Bong eats is like a therapy. I see every video on repeat mode thank you for making this art❤️
So different from our Bangladeshi aloo-murgir jhol. Will try this one day.
I tried this recipe yesterday and the smell took me many years back to my childhood. My dida's kitchen used to smell exactly like this. At the end of her cooking session, she would also smell a little like that. I was too young to realize the source then but now I know it was the katcha gorom moshla bata. Will be incorporating it in more recipes. Smell can have such powerful associations.
Recipe as always was perfect.
hmmm. mesmerizing sounds of frying , stirring , cooking and wonderful music.....
কি দারুণ। Not a single word uttered but such a detailed video with a pleasing melody in the background.
This one felt like smellovision, each frame held a fragrance! Loved that you showed the neck piece, I can't remember the last time I saw it in a cooking video. We learn to be wasteful, or not, from what we see. This late evening notification was a nice surprise. Happy Eid!
Love chicken necks 💛
@@BongEats It's my most favourite piece of a chicken, actually. Baritey shobai gola gulo amar jonnye rekhe day. Onnyo karur aeto pochhondo noy.
This has become one of my signature curry dishes..just perfect 👍
Sitting here in Mumbai in the midst of a pandemic, my doors to Kolkata were closed right after my wedding. I don't know when I'll get to taste my mother's cooking again, but thank you for bringing back to me the flavours of home. My husband and I love your videos. 🥰
That potato in the end was magical! Interested to see how this turns out and tastes different than your other murgir jhol recipe. 😋😋😋
The belly is an ungrateful wretch, it never remembers past favors, it always wants more tomorrow.
It’s not ungrateful... it’s just hungry if you don’t eat for a day. Relax
Simple yet delicious looking. Ima try making this dish. Thanks!

I cooked this dish today and I can not express in words that how good it turned out! Thank you sooooo much for sharing such beautiful recipe!!!
I was thinking about how to make chicken this Sunday afternoon. Suddenly I remembered your video whose notification came last night .. Thank you🥰
Team:
I knew you would make any simple recipe unique with a twist. But this is the first time, I'm seeing Insya(don't know the meaning, yet) is using a flat mortar and pestle. Which are an iconic symbol of Bengali kitchen.
Actually used everywhere in India. In south India, MH, Gujrat, Rajasthan. It's an Indian kitchen thing.
@@gargidhote I didn't use words like, 'the only/are only iconic'. Kindly read and understand any comment with patience. It helps to improve.
Take care!
Thanks bro
I'm a big fan of your videos. The recipes are so mouthwatering😋😋😋
Thanks to the team for all your authentic Bengali taste.... Feel as "Maa r hater ranna" 🙏🙏🙏
Simply wow! The visual treat, the poetry through sounds and finally mashing the aalu with jhol and bhaat- hats off to the creativity.
Have you noticed you are a shy away from a million subscribers mark? Needless to add, it doesn't really matter as economics and rat race tends to corrupt creativity.
Lots of love to all!
Looks heavenly. Your recipies are a ray of hope for people like us staying away from home. Thanks a lot @Bongeats
My family loves this particular chicken curry....thank you...
Love your recipes.
I love the fact that you have recycled the dishwasher gel bottle as oil storage container. Smart❤
You have been such a blessing this lockdown. Your narrative and visuals made it all look so easy (and provided a LOT of sheer satisfaction while at it), I now have no trouble tackling dishes I used to perceive as too difficult to even attempt.
Also, proud member of the sheel-nora gang!

The last bit when you break the aloo and mix it makes my mouth so watery

Love this recipe guys. Awesome
All your recipes bring back so much of nostalgia to this bangali here. Like this mangsho jhol is linked to a lazy Sunday afternoon lunch, followed by a long nap. I have cooked most of your recipes for my husband who is a punjabi and he loved them all. Amazing job guys and I will always be on the lookout for more and more recipes!
@Bong Eats, all of your recipes are perfect, it never failed to please! And the background music specially this one is soo relaxing! I am confused 10/10 for recipes or sounds!! 😃Keep going 👍
I was pretty fascinated by the color of the gravy as me and my family love super spicy food. Just did two replacements used buttermilk instead of yoghurt as I didn't have the latter. And extra helping of red chilli powder, as we wanted extra hint of spice. It was so wholesome and tasty!❤️❤️
I love you guys..i dont know why do i love your channel..perfect channel for me..
You guys certainly know the art of cooking, its a nostalgia watching your vedios...whole hearted love for you guys
