Impressive the way that he prepare the head. In a lot of places this will be something to discard. He take care of small details. This is how to honor the food and the life that the animal gave.
Who discards the head? If it’s not consumed by humans as is, it gets processed into byproducts from pet food to sausage, etc. guarantee you no one is throwing that away.

Мы (казахи) сразу после после очистки отрубаем носовую часть (не едим его, внутри находится нечистые слюни и другое) а также рога под корень, отделяем челюсти (собакам) очень тщательно моем и только потом в казан варится. Так более чистоплотно и безопасно, по мусульмански.
