  • Shrimp sauce and shrimp paste are popular condiments in China and southeast Asia. And in Hong Kong, there are only a few independent sauce makers left. We went to the fishing village of Tai O to see how it's made.

I’m always amazed at the different food palates across the world. I feel like living in the US is a blessing and a curse. It’s a blessing because we have access to so so many different wonderful cuisines from
across the world, but a curse because the western palate is so focused on salt, fat, and sugar, that I never developed a taste for some of the more fragrant, pungent, nuanced, or subtle delicacies from across the world. It’s always exciting to reprogram my palate and try new things. Unfortunately I am still afraid of shrimp paste.
