    i tried this with my mom ( i live in copenhagen ) there were about 2000 people wating in line, and we were in the top 50, in took about 4 minuttes to get in, and the burger and theookies were amazing. cool to see a video about it

    It's important for people to push the boundaries and set the bar higher, but at its core, food is all about getting together and sharing a moment, its common ground which every human understands. I think this is fantastic, for the industry as a whole. The world would be a better place if we can all divert our priorities away from making money and towards making memories, the money will come.

    I love the genesis behind it. During times like this, a 15 course tasting menu just doesn't feel right. We need to ease the idea of a social gathering back into the cultural mindset. And what a better way to do that than some nice wine and a delicious burger with friends. It shows that Noma really has their head in the right place and are very astute at understanding not just the mind of their diners, but their hearts as well.

    Went there last thursday and the queue was waaay too long. Came back friday afternoon and they had litterally just sold out :'( Had to go home to Jutland saturday morning... Coming back in a couple of weeks though, and this time I will get my burger! Loved to hear about Rene's thought process in the planning of their opening. Great video!

    I really appreciate the humbleness here. Also 150dkk (22$)is alright for a burger, its a steep price but i wouldnt compare this to most burgers because obviously a lot of thought went into it.

    @1:53 it's crazy how a lot of chefs interviewed during the pandemic have that 1000 yard stare. Like soldiers returning from war. Restaurateurs suffered the most during the pandemic.

    Ok, I was thinking...hmmm a burger is a burger (well unless it's Gasoline Grill yum!). HOWEVER, when he described (so humbly) that it's bavette with fermented beef and smoked beef fat cooked in butter, well lemme just say OMG! I had just seen insta-stories of people lined up which was what led me to this video. And I thought: it looks like they're lined up to get into a nightclub. Like seriously?! But now, I guarantee you'll see me and my hubby right in line with them before the week or weekend is done! Now, I can't wait!

    Just a quick note, I think the veggie burger isn't koji, it's tempeh, from Indonesia. Different mould, and that's probably why you found it so meaty.
    Anyway, this is very wholesome. But I do hope the "classic Noma" comes back, with all the craziness and braininess.

    Sounds good, looks good, very simple, best way for a burger to be, my personal preference leans towards smash burgers though and not real cheddar aka "American" cheese :p

      Vikingr Beerdserkr "not real cheddar - also known as american cheese" are you confused Viking - which do you like? For the record cheddar is NOT the same as american cheese however American cheese makes a better experience on a burger if your outset is a burger as a common fast food - cheddar comes in many variants, none suitable for a through fried ground beef. Only American cheese will be authentic. The only reason this and other restaurents are using cheddar is because authentic American cheese is not readily available in Denmark, it only comes in sandwich packagings - opening more than one of these every day will prove to be a nightmare - not to think about hopefully Noma will need to open hundreds if not more. Cheedar and American cheese is simply not the same thing and they will not produc en an expected result when used in a hamburger scenario. You can make your own American cheese at home, its not really that complicated, all you need is time - for some reason Noma does not think that this spending of time is crucial - makes you wonder if it all really is a culinary experience or simply a financial bineficial operation - I can tell you this much; I do not want a hamburger to be an "umami" experience as the kind lady reporter defines the hamburger as.

And FYI, the multiple world number 1 restaurant, famous for going to extraordinary lengths to achieve the results they want, could very easily make “American cheese” - or junk food cheese / plastic cheese as the rest of the world calls it. Do you really not think NOMA have made the conscious decision to use Cheddar instead because they might know a little more about food and flavour than you do?

      Yes, Noma had to deliver a great burger, and they did. €17 is not that steep for a burger in Denmark, though. Not cheap, but not unheard of.

    I saw on instagram they were REALLY packing the meat in their hands while forming the patties? Did the texture of the pattie seem tough or "meatloaf-y"? Also, what cheese did they use? How was the taste? Was it very beef-y?

      I don't think they pack it too hard. Definitely didn't feel too tough. The flavor is very beefy, yes. Salt and umami. They use real cheddar cheese, but I don't know which kind.

    In Italian you don't pronounce the "i" seperatelly in "giallo". It's more along the lines of "jallo". It means yellow, so I assume that's why the wine is called that :)

      If they sell 200 burgers/week=200 cow's. They must use other parts like chuck and rib. It can't only be hanger. Maybe 10% hanger, 70% chuck, 10% rib, 10% brisket.

      I don't think that's possible right now, sadly, as the inside areas are sealed off and for staff only. And it would probably be too much for them to take everyone on a tour, considering the thousands of people who lined up yesterday.

    The buns don't look amazing even if they might taste so. It's extremely hard to daily make a high volume of homemade buns, you need both good bakers and good bread ovens and space for proofers. I was in charge for making burger buns in a famous michelin starred restaurant in Italy and it was pretty painful to make them all the same and with a perfect look. (They were for the kids menu). Still, a good choice to become a burger place in these times for Noma.

      The buns are delivered from Andersen Bakery from the same recipe that is used for Gasoline Grill (the best burger in Copenhagen and one of our favorites in the world), so the taste and texture is perfectly consistent every day. I don't know what about them you don't think looks good, but I can assure you they are delicious.

    I am concerned about the chefs and staffers at Noma preparing and serving menu items without wearing masks. This is really frightening when one considers how COVID-19 is spread in a community...their lack of protection could create an infection which may cause illness and fatalities. Not good. However, it is also Interesting how Noma has reinvented itself in light of the current COVID-19 outbreak. I wonder if a burger bar will become a permanent part of the Noma menu in the near future and, if Noma will continue with its' specialty seafood dishes in the future. Referencing the Noma burger, I must say the burgers served in South Los Angeles, USA establishments are off the chart and if they were in Copenhagen, would pose serious competition with Noma's burger in terms of appearance, flavor and creativity. This would probably apply to all burgers made in the USA! Noma, remember, stay safe for the health of your staff, their families and your customers.

      The reason they don't wear any masks is because there is no requirements to do so in Denmark and there are literally no people with masks here. That's due to the low spread of the virus and the borders still being closed. Maybe the regulations will change in the future. After two weeks of open restaurants, the numbers are still going down in Denmark, luckily. It's unlikely that Noma will continue with the burger after June, sadly.

    Last Monday i tried to get one hamburger, under the rain there was a kilometric line of people: in the video she is jumping happily without anyone around. What time should I try next time? Ironic.

      Roberto Caruso this was a filmed during a closed event. Go when they open at 13:00, and you’re pretty much guaranteed a burger.

      Sorry to hear about your experience, but I doubt they make the burgers in different sizes. I'm sure they weigh the meat to exact measurements. Was this in the garden last summer or at POPL?

    No tomato and lettuce in the beef burger?? And the Burger is not grilled? Wtf. And 125kr (18,5 USD) for a small burger is just nuts

      Mathias White I would have hated if they put lettuce and tomato on the beef burger. Wouldn’t have matched the flavors. 125kr for a burger in Copenhagen is a fair price.

    I think it's a bad idea for restaurants this famous to not have reservations. Because it leads to long queues outside the restaurant and can lead to huge disappointments if they sell out of food while you're waiting.
    This could be avoided if they had reservations. Then you would know exactly when you're gonna have to go coz your table is booked so you won't have to worry about food being sold out or waiting for hours outside the restaurant.

      Jiren the Gray they would also have one gazillion reservations if they did, so no reservation is the only way to go for a concept like this to make it accessible. If you line up when they open, you’re pretty much guaranteed a burger. If you can’t bother that, you can’t really complain if they sell out, in my opinion.

      @@andersandkaitlin but if you line up, wait for hours and then find out they sold out that would actually be worse than being able to get a reservation. That's the entire point of a reservation. You don't have to wait in line physically praying that they don't get sold before you can get in and have one. If the reservation queue is full you'll know that you have no chance of getting it and will directly seek another day to try your luck.

      @@jirenthegray792 It just wouldn't work. They sell 2000 burgers per day, mostly take-away. Imagine the logistics of handling reservations on top of that. It's really very simple. If you line up an hour before they open, you are pretty much guaranteed a burger. If you want to risk disappointment, you come an hour before they close.
