Blanching Vegetables with Chef Rey Treasures of Food

Chef Rey Treasures of Food, "It’s All About Color" demonstrates the process of Blanching vegetables. It is an extremely simple technique wherein vegetables are briefly submerged in boiling broth/water, then, once they have reached the desired level of done-ness, plunged into an ice bath to stop the cooking process. Blanching sets the color and texture of the vegetable.
