Can you explain the purpose of going over the poultry and lamb with the blow torch lighter? I'm assuming it's to clean the raw meat of impurities such as hair, etc. am i correct?

Id have never thought about putting a spicy rub on lamb or lemon juice after cooking. Here in the UK we either put Rosemary and Garlic in the meat or mint sauce when its cooked...That lamb looked delicious
