I got an offer from atu and I have nearly 2 years of experience as a quality analyst and I am getting suggestions from everyone to have atleast 3 years of experience.
    Bit confused about coming there.

I agree with the suggestions you’re getting. It’s an odd threshold on experience, but companies and employers do consider candidates with more than 3 years of experience more.

What about with 2.8 years of experience in data engineering and a masters in AI?

It’s almost 3 years of professional experience, which is a good thing in my opinion. What I would suggest is to apply for internships during your studies to help you build a network. Reach out to your college career cell, professors and maybe even college alumni - see if they can help you with references.
If you are struggling to find relevant internships, work on independent projects. You can pick the most common/recurring problems in your field or specialization and provide how you would solve it. Publish your work on LinkedIn or Medium. This will show initiative and might help you attract employers.

Based on my understanding, experienced candidates are preferred . Hence least 1-2 experience is necessary to Target jobs easily.

Freshers have a more difficult time finding jobs as compared to experienced people. If it’s possible, I would suggest taking some time and gaining professional experience before you make a move.
