I tend to have very detailed notes on everything, but that’s because I enjoy writing it, just because you wrote it doesn’t mean you have to use it. I agree a hell of a lot of what I wrote will probably never use, but that doesn’t detract from my own enjoyment.
You asked if anyone wants more like this: I do. :) I like the other ones, that show me how the tool itself works. But this is good, too. It's a useful perspective for me, as a relatively new GM.
I really like this discussion. I've been following your videos to learn a lot of technical stuff but hearing some of your actual lessons learned is great.
Worldbuilding is a disease, not a choice. Once you've named that first village on the far side of the world, it's already too late.

I use Obsidian for writing/world building a Slice of Life real world setting (but a fictional town and characters). I ran into a similar issue with wanting to do too much. But like writing, I'm much better with just making up things as I go ("discovery writing"). So now, I just add stuff when it's actually relevant to the story, or details I don't want to forget.
I realized that short bullet points are my favorite way to take notes in Obsidian now, and if I need to flesh out things, I can do that separately.

It def depends on setting for me! But I agree it's easy to over prep - things like NPC names, objects at shops, and any other parts of the setting where players will just pass through doesn't need to be super detailed. I don't play or run any pre-made campaign settings, so the worldbuilding needs to be a bit more in depth. It's a good discussion to have though, a lot of writers like becoming DMs because they want to share their story/world and don't realize that its a lot different than having full control over a narrative.
Broadly it seems like you've thought about the same thing I've thought about, Point crawls are the best way to do long drawn out travel, one encounter in-between each point or at each point depending on the games needs.
I have the distance measurement calculation in my notes so I base the encounters on the days travelled and type of location travelled through.
Do worldbuilding for the sake of worldbuilding.
If you need world building for DMing, just bullshit your way through it. Write the stuff you need in notes (KISS - Keep is short stupid), make stuff up as you go, retcon if you have a cooler idea later and what was said during the game isn't game-breaking.
Otherwise, you'll have an even bigger workload as a DM, get burned out, and probably won't even remember what you wrote in the heat of the moment anyway.
