❀Cooking With Mom: Nem Chua {Cured/Fermented Beef}

- Nem chua is quite a delicacy in the Vietnamese culture. Typically, small little cubes are served on a dish, and people will munch on it casually around a table over a few opened bottles of beer. Fermenting and curing beef has been a part of almost every culture before the invention of the fridge. Give a try! This spicy, sour, garlic appetizer will surely be a new favorite! I grew up on this stuff, so I don't find it strange at all. Truth is, sometimes I actually crave it!
1 lb of fresh lean ground beef (you can use pork, but it's much safer to eat beef)
11 Thai Peppers
1 Garlic
¼ cup Sugar
½ tsp Salt
1 Package Loba Nam Powder Seasoning Mix (Sometimes called Nem Powder Mix)
1 Bag Que Huong Bi Tuoi- Cooked Sliced Pork Skin
4-7 drops of Red Food Coloring

Haven’t had beef nam before always the pork from the store. But I can’t wait to try it with beef. It would make more sense right since we eat more medium rare, raw beef instead of pork. Good stuff

Yah when I was younger mom did too..because the store bought ones were pork...then she saw how much I loved them so she learned to make them..and she made them with beef. This way she knew what is in it, how it's made and if I could eat it or not!
The best fermented pork is from France made by Oriental Kitchen. Nowhere in the US, from California to Texas, or in Australia or in Vietnam can beat the taste of Nem Chua from France. Odd to say, but France has the best Nem Chua.
I love cooking with mom! I'm away from home attending college for the first time and these videos remind me of home. I miss my mom so much and this is everything she makes!

FYI, you should ground your own beef and not buy them already grounded. Grounded beef from store comes from separate cuts having more chances to get bacteria.
its so cool to see different ways to make nem chua, the way my grandmother makes it, after it fermented, we cut it up into little rectangles and manually wrap each piece in plastic wrap, banana leaves, pepper, and garlic^^ i wonder how your mother's nem chua taste like~
In my family we make Sauerbraten which is beef that is fermented in the fridge with vinegar and onions. We usually ferment for about a week, and its delicious!

My mother in law barely speaks the language around here too, and I understand she didn't learn up till now because she was busy raising her kids and stuff, but she has time now, and she could totally just go learn, and she doesn't. I think it's just a decision one has to make, and of course it's hard, but even just learning basic english would benefit her so much!

Try it with roast beef or spam. Using vinegar and sugar instead of the packaged curing agents.
I love to slice it thinly and fry it a little to eat with rice! Because it is somehow "raw", my parents always cooked it for me. And now it's the only way I like to eat it!

This sound weird to grill this nem chua but I did it. When I was little, I love this nem chua but my stomach could not stand the uncooked food. My mom grilled it and gave it to me. It was awesome and I love it. Now I could have the original Nem Chua but I grill it sometime when I do BBQ with friends.
I remember eating deep fried "Nem Chua" everyday after school in Vietnam. Best thing everrrr.

well traditionally, vietnamese nem chua is wrapped in tree leaves as small cubes and its recipe is a little complicated, so we usually buy them at stores, they sell 10 cubes tied together. Since you can find the nem chua seasoning, it's a lot easier to make it :D too bad I can find that seasoning here in Vietnam

This is definitely Vietnamese! Nem = pressed meat used for food that are meat grounded together
Nem nuong - grilled meat , Nem chua = sour meat, Nem ran = fried spring roll ( in northern Vietnam, called Cha gio in southern Vietnamese. Cha is another word meaning pressed meat for other types of food)
Laos and Cambodia borrowed a lot of Vietnamese food

I tried this recipe but the nem chua is not that sour, did I do something wrong?
No it does not....I really don't know how to explain it without scaring you. It tastes like pickled meat. When you say "sour meat" it scares people..but there is a sour, garlicy, spicy taste and it's quite delicious..most of the southern asian countries do this...the recipe varies..but very similar.....

I tried this recipe and 1/4 cup of sugar is way to sweet. You don’t need to add additional salt and sugar.

Yeah, I know. Same thing but different methods in making, also some different ingredients, that's what I meant by similar. If we really wanted to know the origins it would be difficult to find out because each country has made their own versions of it. I don't think there is a right or wrong way to make it. ^-^

Does the beef tasted almost the same with making with pork? Texture wise? I was told you're supposed to make with pork the classic way.

My MIL speaks english perfectly, she barely speaks Hebrew though. I'm bilingual, so we have no problem communicating, it's with the rest of the world she has a problem :)
Glad to hear you find the whole Israel-Palestine thing interesting, I feel like a lot of people have no clue what's going on...
It's not that she chooses not to learn English, she was never given the chance. When we first came to the U.S she worked with Hispanics for 5 years, then she worked alone at home (seamstress) for 5 more years, then she worked in a factory for 15 years with other Vietnamese people. When she came home, it was a rule to speak Vietnamese to us so we don't lose the language. As far as learning...it doesn't come easy to people.
