OMG Kawasan has developed! The last time I was there was in 2007 after graduating from University with my friends. I remembered the floating bamboo raft that we were in. Those were the gold old days.

the tomato ketchup is there for the eggplant. and we NEVER put it on a pizza. we use hot sauce instead. don't believe too much on stereotypes
I prefer a thin layer of banana ketchup for tortang talong. Full on Filipino flavor.

tortang talong done right is soo good...they smoke/grill the eggplant first before frying it with an egg. I've tried it where they just boil the eggplant first and it doesn't taste good.
The smokiness really adds the drama I needed

“Tortang talong” for the win!!! What makes it really flavorful is the roasting of the eggplant in an open fire (or roasting it in a very hot oven). It gives it a lot of “umami”. I am glad that Fabio is fearless when it comes to food👍🏽👍🏽
Honestly it was really delicious! The smokiness was the best ever. Otherwise it would have been a regular fried eggplant. This added so much flavor

The eggplant is grilled first and then cooled off so you can peel it. And then you mash it a little using a fork before submerging it into the scrambled eggs and then frying it.
It’s so good!!! I hope I can recreate it at home

OMG Fabio, you should bring fabio to Bacolod where best Piaya is! it's just near Cebu! Im from Bacolod and you should visit and do food trip. BTW went to Kawasan back 2015, I think I almost died and fell from the Waterfalls because of my stupidity hahaha I ran from a top of a slope and I could not stop my self because it is too steep! T_T
🫢🫢🫢🫢🫢 they warned us in advance because it can be dangerous at the falls. I bumped my knees so many times against the rocks too 😅
