    • @jasperity2030
      @jasperity2030 Před rokem +6

      I'd imagine it depends on the sharpening device used as well as to what degree the knife has to be sharpened. If it's going from completely blunt and unusable then I'd imagine washing it is required, but for knives that are only sharpened little by little to constantly keep them in top performance I can't imagine there's any harm.

    • @RushFX

      I have a uncle who was a chef for 35-40 years. He retired due to losing most of his vision (eye conditions run in my family) being Pacific Islander fish is must, he can do the same thing despite his vision loss. You do something often and it becomes second nature. I myself work in a factory with heavy machinery despite my dead right eye and 70% loss of vision in my left. Hell I can even drive a forklift and scissor lift. Ppl with vision can do the same with practice but most don’t train themselves to do so bc the still have sight.

    • @davidvandersterre
      @davidvandersterre Před rokem +3

      Perhaps he was "looking at the same general directions" because it helps the muscle memory from previous times he cut salmon. when you do things over and over the same way, you likely can't perform the task blindfolded perfectly standing perfectly straight all the time.
      He also almost never loses hold of the salmon, except when he takes off the first part. After that ofc. he could still easily remember where exactly he put the fish, is not that small.
