  • This episode is an opportunity to tell you how I got started in the knife game. It began seven years ago with Bob Kramer. This video is an opportunity to share the great story with you. The man took time out of his day to teach me how to sharpen a knife. This is when the love affair began. I'm very grateful to him. I'm sure he does not know who I am. That's OK! I learned so much more since then. This video also has some updates on future events for the channel.

    That’s a cool story. I worked for Sur La Table for a short period of time (mostly for the discount haha) and got to meet Bob Kramer. He’s a really nice guy. I wish I could afford one of his handmade knives.
    If you are really interested in some serious knife knowledge I highly recommend you speak to Jon Broida from Japanese Knife Imports in Los Angeles. He’s a master sharpener and has a wealth of knife knowledge.

      Thank you! It was definitely weird when it happened. I would love to say that he is an amazing person. I definitely appreciate him taking the time. Now that I started this channel, I want to reach out and tell him the story. Maybe I can score a trip out there and video And for the channel. We can relive the story together

    Nice story gregory :) and a good single bevel knife is hollow in the middle on the single side. A bad alie knife is not hollow so you can't sharpen it as good but it's still possible but a pain in the bud. And use your inhaler before shooting a vid hope that will help ya getting enough air during your shoots. greatings hansje trala ;) and for you knowledge i only own inexpensive knives ;)

    Seeing this video now and hearing you where soon 1000 and now you are over 6 thousand thats a good growth mate. Im hoping to break a 1000 myself been at 700 + forever hehe
    And if if kramer called me i would probably stutter and sound like a babbling baboon haha

    Great story, thanks for sharing it. I bought an entry level Japanese knife from that company you recommended (epicEdge) Nashiji Chef's Knife (Gyuto) - 7 1/4 in. (180mm). Any future videos on sharpening this style knife appreciated. Keep up the good work brother!

      So… Mine is not dull yet but I will definitely do that. I love that company. I cannot express enough how much I think you came out the winner. Congratulations and thank you for taking my advice. I will do it at some point but right now just enjoy your night. You should be able to follow along my other video on sharpening on a budget. That will get you through. Man I’m so excited for you!

      @@nadm It did arrive sharp, but not as sharp as I envisioned a thin Japanese knife to be. No worries, will keep practicing and learning.

      Just one more thing. I just finished sharpening this gyuto on my Norton combo 4k/8k combo waterstone. (Which I've had for 18 years for woodworking use.) Now it's scary sharp. Now I understand why they say these are a pleasure to sharpen. 👍

    Hey Greg, what do you think would make someone the best knife sharpener? Is it someone who can get the keenest edge or get a super quick edge the fastest or know the subtleties of every steel and geometry/profile or all of the above? I have heard people say that Takayuki Shibata is the best sharpener in Japan if not the world but what does the "best" even mean?

      I mean this without any arrogance. I think I can get a knife as sharp, if not sharper, than he can. Obviously he gets repeated successful results. His knives come in lasers. Everyone wants him to do the sharpening. I’ve known other people to be just as good. I do think it’s something to be able to do it to every type of steel and to have no scratches and to be polished perfectly. Some people like it to the edge. The Edge should vary according to the task it is designed to perform. The best knife sharpener should probably be someone who can do all of these things

      @@nadm Yeah it just got me thinking when i got my knife from him "oh this isn't the sharpest thing I've ever used but supposedly he's the best sharpener" so it got me thinking about what the best sharpener does differently. It's probably just all second nature to the best sharpeners and they don't have to really think too much, they just do and get great results

      No I didn’t. I am sorry you feel that way. This actually happened. I also think I have grown far beyond what I learned from him. I have only gained 2 subscribers. God can judge me. I know the truth. I am looking for ward to trying to go to his workplace one say after COVID and sharing the story again with him.
