    Fantastic ideas come from necessity. During Covid grocery shortage I made a pantry bean soup with a can of refried beans, 2 bacon slices, 1/2 a diced onion a can of rotel (whatever brand you have is great) 1/2 cup canned corn, 4 cups of water and two bullion cubes. Seasoned with salt, a pinch of cumin and garlic to taste. Fry bacon save grease, set bacon aside, sauté onion, add beans and water, stir until fairly smooth, add everything else and simmer about 10 minutes on medium.

    I sometimes use refried beans to thicken a “leftovers soup”: broth, refried beans, rice, any veggies wilting in the fridge, and any leftover meat or sausage, plus herbs and spices.

    I always appreciate it when you say to use whatever you have. I’d never go to the store to buy one ingredient for a dinner, just never crossed my mind to do that. On the rice, corn, refried beans with salsa dish, roll it up in tortillas and throw some cheese on the top, into the oven for 30, and ‘it’s enchiladas for dinner’…

    For sunny side eggs I lid it or pour the oil over the whites with a spoon to cook the whites. I also cook eggs at about 275 or a med-lo heat. Love love love runny yolks🥰

    I like how, in the last dish, you just cook the rice in with everything instead of separately. Saves time and dishes!

    I really appreciate how you call out when using garlic powder and/or minced onion will work almost as good in a recipe. Taking the stigma out of living in a food desert is awesome.

      I'm not in a food desert, but I prefer using it because I just can't seem to use the produce fast enough prior to it going bad, and I felt it was so wasteful. Since Covid, I've even allowed myself to buy dehydrated items to prevent loss, such as dehydrated celery (even though I know I should just cut up and freeze my aging vegetation - with 5 adults in the house I'm terrified of the unknown in our freezer - lol.)

    I love how yo adapted the recipe from the original to make it more simple and accesible. I usually struggle with recipes online because they look so complicated, so I just give up. What you did is amazing and tastes great too. I tried the huevos rancheros and topped them with salsa, cilantro, yogurt (for the sour cream) and creamy sriracha. Soooo Good!

    My mil's recipe is the best, because it's the simplest- just put a spoonful of refried beans in a corn tortilla, fold it in half and fry them in a little oil or cooking spray.
    You can add some taco seasoning or cheese to the beans, and serve with salsa, sour cream. So simple and so fast!

      We call them Tacos Dorados. Even if you add meat you don't need much but I prefer the beans and cheese.

    We did something very similar to the refried beans and rice just this week. In the same "trying to use what we have in the freezer" vein, we had taquitos so I mixed black beans and corn and I cooked "in the bag" rice for a side dish. My husband has made his own quesadillas with the left over beans/rice. Such a time and energy saver for me ❤️

    I *loved* this huevos rancheros recipe. Another good tip is to spoon a tiny bit of the hot oil over the top of the egg whites - avoiding the yolks - this really helps the whites to set while keeping the yolks "sunny" :)

      I like to use a (glass) lid. Not quite as pretty as it does form the slightest white layer over the yolk, but it definitely prevents me from over cooking. And since I actually prefer an over easy egg, this method prevents me from an accidental yolk breakage.

    I use tomatoe sauce with onion and green bell peppers and season it I always have jalapenos and I use butter for the eggs when frying it so good

    As a mainly vegetarian & hubby is a meat eater, I am enjoying your videos so much. We are a one part time income plus pension empty nesters household & your budget meal ideas are so much appreciated. We do eat a little different here in Australia but basic pantry, freezer & fridge items are similar. I love refried beans, hubby not so much…so I truly love that a can of refried beans can stretch across a variety of meals & be “hidden” like the last recipe.     If I remember correctly your family uses and really likes the Aldis salsa, so a happy substitution! The quesadilla is such an inexpensive lunch/dinner. Quesadilla for Dinner is a perfect vegetarian dinner that the family won’t even realize is vegetarian.

    I like that you take the same ingredients and make different meals - I usually have leftovers and am always on the lookout for new ways to use them.
    Yesterday I made a delicious Cheese Burger Soup and today I put it in a Casserole dish and topped it with Cornbread and baked for 20 minutes in the oven yummy 😋

    Add a tablespoon of water to your frying eggs with a cover on them. Within a minute to a minute and a half they will turn a lovely pinkish color on the yolk, letting you know they're cooked. Inside should be soft still if you cooked them on medium high temp. This is called basted eggs and how restaurants do it. 😃

    Love refried. Can almost eat them out of a can. Depends on how good they are. Also use them for tortillas chips. ☺️ Love sunny side up eggs. My fave way. All sound yummy. But may try the second one. 😁 Might try the 3 rd one too. ☺️

    What else is yummy and uses some refired beans is doing enchiladas or an enchilada bake with them as well as grated zucchini and summer squash, some cooked onion, garlic, lots of seasoning, and red enchilada sauce. You can use whatever tortilla type you prefer, make it with or without cheese roll or layer them up.

    The third recipe is actually fabulous. I've seen it on multiple channels and websites before and I found that it's equally delicious with rice or quinoa, but pasta will work as well (you just need a deeper pot and enough water to cook the pasta). Refried beans could be replaced with just canned / cooked beans, also salsa is fantastic for flavor, but you could also use canned tomatoes and some more seasoning. I love to make it with some type of ground meat and add chopped onions around the beginning. This recipe is crazy versatile and it always makes quite a few portions and is soo filling! Great video, thanks for these ideas! :D

    I make soup. It's with refried black beans, coconut milk and a jar of green salsa. That's it! You can make thinner with broth if you prefer but this is definitely for a I need to eat now kind of night. Garnish with whatever you wish. If I have pico rd gallo I use that it just some cilanto.

    I make a Mexican layered dip using refried beans as the base, then layer fresh salsa (store bought works too) layer of guacamole, layer of some grilled corn kernels, layer of bean mix with sweet chilli sauce stirred in, layer of sour cream and top with grated cheese and spring/green onions. You can add a layer of Taco meat or grilled chicken chopped to make it a meal. I recommend making this in a wide dish so the layers aren't super thick or individual bowls. There's no right or wrong order for the layers and I have made this inside a homemade tortilla bowl with tortilla chips on the side for parties.

    I have made your skillet rice dish with black beans instead of refried beans and yellow rice instead of white rice (canned black beans can cook with the rice, along with the corn and tomatoes/salsa, so very "dump and go") as a cheap pantry meal for years. When I had it, I also added shredded or diced chicken at the end. When my kids were little, it was a family favorite. I'm much more comfortable with my rice skills so now, as you say, I vary it up with whatever I have on hand. It's a very forgiving recipe use what you like or what you've got and your budget will thank you.

    You can add a little water to refried beans to make them more manageable when putting them on tortillas. It's a texture preference thing though.

      Love the way our local Mexican resturant serves them. They are really smooth and not too thick, full of flavor and some cheese on top. Seen recipes that use lard or baconfat try fry them with and thin with milk, mexican cheese on top, maybe cotija..

    I use them in tacos, burritos and nachos. I'm not really fond of them but the Trader Joe's fat-free can is SOOO yummy that I've eaten them alone and yum!

    If you put a lid on your eggs and cook at a lower heat you can get a perfect cooked egg with runny yoke.

    Do you think I could make the potatoes cakes using peeled mashed potatoes? My husband is 100% against instant mashed potatoes. It takes all I can do to get him to eat frozen or boxed hashbrowns. We all try to make our husband's happy
    Especially since he is the only one that leaves the house to go to work.

    mix 1 can of green chilies to the can of refried beans and 1 envelope or 2 tablespoons of taco seasoning, spread on buttered slices of bread for latin inspired grilled cheese sandwiches.

    Quite a few years ago, i frequented a website called Hillbilly Housewife and she would make the leftover mashed taters into thick pancakes without the protein and she called them.Doodlebugs and she served them as a snack with butter and syrup.

    It's not quite as pretty. But to help "cook through" a sunny-side up egg, I place a glass lid over it and let the steam cook the upside of the egg. I'm okay with this, because I prefer an over easy instead of a sunny-side up, and this is a compromise that prevents me from over cooking the yolk, and prevents yolk breakage.

    Generally, refried beans don't last long enough in our house to get inventive! Slapping some beans and cheese on a taco shell broken in half, a minute or two in the microwave et voila! Fast meal, good source of protein, and fiber.
