How To Cook Pineapple Tofu With Ackee Season Rice

1Block tofu
3 Tsp All purpose seasoning
Salt
1Tsp White pepper
1/2 Tsp Salt
Sweet pepper
1/2 Cup pineapple diced
1 Tbsp for brazing
2 Tsp Crushed garlic
1 Tsp Chopped ginger
1 Onion chopped
1 Stalk scallion
Sweet peppers
For Sauce
1/2 Cup Pineapple juice
1-2 Tbsp Sugar or agave
1 Tbsp Vinegar
1-2 Tsp soy sauce
1/3 Cup Ketchup
2 Tsp Cornstarch
For Ackee rice
1 1/2 Cup Cooked ackee
2 Stalk scallion chopped
6 Clove garlic finely chopped
1 Purple chopped
1/2 Cup frozen veggies
1 Tbsp Seasoning
1/2 Tsp Salt
1/3 Tsp Black pepper
2 Cup Coconut milk
1 Cup Water
2 1/2 Cup parboil rice
1 Scotch bonnet pepper
Oil for sautéing

Awesome. I can try this I have some ACKEES in freezer. I picked about 3doz parboiled then freeze. Did you parboil b4 freezing%?

😊 I didn't parboil them I just clean them up and freeze I prefer the texture of the ackee that way. Especially since I tend to over mix stuff while cooking😊
