Puerto Rican Bacalaitos [Salt Cod Fritters]

  • This is the 6th edition of our cooking series, Latin Street Food, where we show you how to make Puerto Rican Bacalaitos! Bacalaitos are salt cod fritters, favorites among the beach towns of Puerto Rico, and sold by many street vendors scattered across this tropical island. When I was around ten years old, I spent the summer with my grandmother, who lived in the capital city of San Juan. She took me to various places, and it seems that everywhere we went, someone was selling bacalaitos. From the very first bite, I was hooked! For years I’ve always wanted to make a super crispy bacalaito. In this video, I show you a more traditional way, and then the super crispy version. The crispiness of the final product makes these bacalaitos unbelievable! Make it Sabroso!

    Ingredients
    1 lb. salt cod or pollock
    4 cups water
    1 cup flour
    1 tablespoon cornstarch
    1 teaspoon Loisa sazón (link above)
    1/4 cup red onion, minced
    1/4 red bell pepper, small dice
    2 tablespoons fresh cilantro, chopped
    1/4 teaspoon black pepper
    1/2 teaspoon dried oregano
    1 tablespoon Loisa sofrito (link above)
    2 cloves garlic, minced
    3 cups avocado or canola oil for frying
    1 1/2 cups reserved cooking liquid from bacalao
    For even crispier bacalaitos, add 1/2 cup water and 1 teaspoon baking powder

    What's the purpose of use corrnstarch?

    Does this taste sort of like “cracklins” from Long John Silvers?

      I never had cracklins from LJS but the texture is like a fritter, but thinner and crispier. The taste is savory and a little salty because of the bacalao. Thanks for watching 🙏🏾

    About how many bacalaitos will you get from this amount of batter.?

      Depending on what size you want, but I used a 1/2 cup for each fritter so it gave me 8 fritters. You can adjust based on size. Hope that helps! Thanks for watching! 👍🏽

      The trick is proper soaking/boiling of the bacalao to remove the excess salt.

    You can’t make your own Sofrito! That’s not acceptable🤨but I guess you have a good reason, right?😀

      I make my own but when I don’t have fresh on hand I will use store bought. However, since this video I’ve been using an organic sofrito by Loisa who also makes organic Adobo and Sofrito. I highly recommend them (link in the description of this video) Thanks for watching 🙏🏾
