Grandma's Japanese Potato Salad

  • Japanese Potato Salad is one of the special treats my mom makes for us. It is really good served on the side with some Tonkatsu. Eat it alone... yum yum
    Recipe includes: Potatoes, boiled eggs, cucumber, round onion, ham and mayonnaise. Maybe add salt and pepper

    Nikki I remember my mom making Japanese potato salad she would never let me help, saying I was too messy. I have over 35 yrs experience working as a chef and she still wouldn’t let me help. My non used to call me kamakiri boysan when I was young, as I got older it became butshachi because I gained some weight. I love watching your mom cook

    Hi Niki! Your mum's such a good cook; loved watching her cook since Shinichi's channel, she's so calm & steady. Her foods always looks goooodd... And I so love Japanese potato salad..it's soft & comforting and the crunchy bits of cucumber keeps you wanting more.

    Natsukashii ne, Niki no okaasama! Sister….. sooooo many memories of my childhood! It’s funny, because I grew up, ONLY eating this type of potato salad, with hamu, tamago, tamanegi, and kyuri ne, so I thought that ALL potato salad had these same ingredients in them. Nope! Hahaha! I remember making this very potato salad for a pot luck at my soon-to-be husbands’ house for a family gathering. Nobody in his family cared for it. 🤷‍♀️ It was the kyuri and hamu that threw them off. LOL! Thank you for bringing back my childhood and memories of my own okaasama. 🥰♥️🥰

    Oishisō! I also like using kabocha in place of the potatoes. The contrast between the orange pumpkin and the green cucumbers is beautiful.

    I made two versions of this potato salad. One verbatim using g Kewpie mayo, and the other using American mayo. (Not Miracle Whip)
    Everyone in my family loved the Kewpie version. The American version just didn't work. American mayo is thicker, and with the softer potatoes just made it sort of pasty.
    If you can't find Kewpie, there are homemade recipe versions online that come pretty close. The recipes are easy. Don't use straight American style mayo.
    Also don't skip the step of draining the water from the cucumber and onions. The salad really needs that crunch. Makes a huge difference. (I was surprised how good the crunch is)

    That was really cool how the salt made those cucumbers green! I have abandoned the boiling of potatoes for nuking them. You should really try it, it's a life changer! So fast and sooo soft. The microwave is great for potatoes! Cool vid! I wonder how bulldog sauce would taste with it?

    This looks so good! It was cute that your mum wanted to remove all the eyes from the potato. Here in Germany, veggie peelers often have a small scoop on the side to do just that. It's much easier than with a long knife.

    I am going to make this it looks delicious. I have that exact knife that came with a set and butcher block. I have a couple suggestions for you. Your Mom should use the back of her knife to scrape things off the board. If you use the sharp side it dulls the knife. Also, if you save the cucumber juice and add a tablespoon to a glass with seltzer and ice it makes a very refreshing drink. You can also add a slice or wedge of lemon.
