The remaining ones are just for the fun factor, and I assume they ran out of runtime, so they had to cut those. The last scene... well these 6 second scenes are common in the films which imdb score converges towards zero. It was entirely pointless, furthermore it was more dramatic the way it was aired.
I think it makes sense that they deleted this scene with Mr. Beckett because it was just prologue as to Castle coming to the realization he needs to be honest about his feelings for Beckett (the true reason for him getting involved in her mothers case) and vice versa for her (admitting her feelings for him). Plus it helps to have some tension between Mr. Beckett and Castle than being all chummy.
Good shows shoot more scenes than can fit in their time slots because there are always the subpar scenes. I don't think these are very good, for example. Actually I was hoping there would be higher-quality scenes here. Also, shows today have far less time than they did decades ago. The networks are selling way more ads.
