    📝 Ingredients: 600g (21 oz) fresh or thawed shrimp
    2 bay leaves
    2 cloves of garlic, sliced
    1 teaspoon of piri piri (a variety of chili pepper)
    3 tablespoons of olive oil
    1 chopped onion
    2 cloves of garlic, minced
    1 ripe tomato, cut into small cubes
    350g (12.3 oz) of carolino rice (or similar short-grain rice)
    3 tablespoons of tomato pulp
    200 ml (6.7 fl oz) white wine
    1 tablespoon of instant seafood soup powder
    1 tablespoon of butter
    A small bunch of chopped coriander
    Salt
    🔪 Instructions: Prep the Shrimps: Peel the shrimps, set aside the shells, and remove their intestine.
    Make the Broth: Boil shrimp shells in water with a bay leaf, sliced garlic, and salt. Strain and set aside.
    Start the Sauté: Heat olive oil and sauté onion, minced garlic, and bay leaf.
    Cook the Shrimp: Add shrimps and season with salt and piri piri.
    Tomato Time: Add tomatoes to the sauté and cook until softened.
    Rice In: Add rice, let it sauté until translucent.
    Mix and Cook: Add tomato pulp, white wine, and shrimp broth. Cook covered.
    Final Touches: Add dissolved seafood soup, adjust seasoning, add shrimp and butter. If too dry, add water.
    Let it Rest: Stir in the chopped coriander, cover and let it rest for 5 minutes before serving.
