Jerk Chicken Recipe:
Soak 8 leg quarters in salt water
Remove fat
Chop up 1 yellow onion, 8 scallions, and 5 scotch bonnet peppers into small pieces (use 9 scotch bonnet peppers if you like very spicy jerk chicken) and chop 2 limes in half
Put the chopped veggies in a food processor
Add 2 tbs of minced garlic, 1/4 cup of olive oil, 1/4 cup of apple cider vinegar, 1/2 cup of soy sauce, and squeeze fresh juice from 2 limes. Add 3 tbs of brown sugar, 2 tbs of ground Jamaican all spice, 2 tbs of dried thyme, 1 tbs of salt, 1 tsp of cinnamon, 1 tsp of ground ginger, 1 tsp of nutmeg, 1 tsp of black pepper.
Blend in processor until a smoothie consistency
Poke holes in chicken
Poor jerk seasoning marinade in a big bowl and add chicken to marinade
Massage well
Marinate in refrigerator overnight
Place on grill until crispy and cooked all way through

I had never learned to cook. But when she passed I had to learn how to cook along with doing so many things on my own again. Your jerk chicken was the very first thing I attempted to make. I love your cooking style. Such a great recipe. One thing I suggest - if you have a piece of hickory or mesquite wood, put it in on the side of your coals when you're grilling and it'll get some of that sweet sweet smoke flavor.

It sounds like a tasteful Act while I have your attention if you could make BBQ chicken on an open fire that means no top it has to be the right distance away from the grill or you turn your back and it's a wrap for all that cook the chicken thighs skin side first then flip it over left the skin filled with fat flip it back over take the skin off season your chicken like normal season the skin as well put the skin back on the chicken let the skin get crispy take them off put dips or dressing or whatever you feel like putting inside the chicken skin or you can just dip the chicken skin try that and tell me how you like it I haven't met anybody that doesn't like it yet

You don't want to dissolve the fat, that would dry it out. Just clean it.
I made this over the weekend. The only thing I did different was cook it on a smoker. It came our wonderful. Was loved by all and I will be cooking again.

This is the one! Took me a while to work it out as everyone does it so differently, but i find this combination is the best. Especially the allspice and soy. I also use a hint of caribbean curry powder instead of salt. Never tried with vinegar, lime, white onions or sugar in my sauce but will try that cheers

I found that Pimento Wood chips is what you need to change the game. It gives the chicken that authentic Jamaican taste. Great recipe!
Disco 6000 so do I add the pimento wood chips TO my charcoal or use ALL pimento??? I want mine to be authentic.
