The complete Kolkata Phuchka Recipe: Phuchka is a way of life in Calcutta. Everyone has their favourite phuchkawala (phuchka seller). Every para (neighbourhood) has at least a few beloved phuchkawalas. They set up their stalls around four in the afternoon. They bring their already-fried phuchka papri or puris in huge bags and arrange them neatly in a huge wicker basket or a glass box covered with a bright red cloth. Then they start preparing their mise en place and mixing the tawk jol (sour water). By the time they are done, customers start gathering around them and the day's business starts.

I swear this is where all my pocket money went as a child. Back when you could get 4 for Rs1. Once I calmly demolished around Rs 30 worth of phuchka in one go much to chagrin of my mother and had to forego dinner and go to bed with antacid and mourir jol. Wonderful tribute to quintessential Kolkata phuchka nostalgia. Thank you so much for making it.

I didn't have fuckka for the last 7.5 months. This video, especially the Wonder Munna part bought back memories of me hiding from my father and having fuchkas. I don't know how the fuchkawaka is sustaining financially in this Covid situation. I just pray the situation gets back to normal soon.

but bro panipuri is different from fuchka ... when it comes to what goes inside the papri thing ...I am a bengali who stays in Mumbai.. the taste and flavour is different.

Whenever I pay an annual visit to Kolkata, I always have phuchkas. In those sublime moments, it's just me, the phuchkawala and the phuchkawala. After more than 3 decades in Maharashtra, it's always Kolkatar phuchka that's the best

This maybe my favorite video.. All these varieties are what makes fuchkawalas job so stressful and the fuchkas so delicious.. I’ve been living in USA for about 1.5years.. I can’t express how much I miss this particular street food.. I’ve tried making these at home but obviously we are no swapan da.. They turn out to be highly disappointing.. Will definitely try this recipe.. Also I’ve never seen anyone frying the papdi.. Very very happy with the effort and collaboration..

After seeing your video, i tried the same recipe of phuchka and i just wanted to say that everything was perfectly made but just the papri was not crunchy as instead of atta we should have added maida. Otherwise it was yummmm😍
Divyanshi Mangtani you’re not actually supposed to air dry it. Try placing them on a wet cloth before frying. If its still not crunchy, leave them under the full speed of the fan for sometime. It should do the trick!

It's really a mouth melting vedio to watch. Phuchka available all over the India but as a bong I can truly say nothing can beat Kolkata's phuchka and right now I really miss Kolkata's phuchka. One thing to mention Ghugni phuchka as well as aloor dom phuchka of Benur phuchka of Ramgarh, Ganguly Bagan also very femous n popular till date.
