- "Somen" are very thin Japanese noodles made from wheat flour.
This noodle, which is often eaten in summer in Japan, is made in midwinter. It will be made thin and long with time and effort
Completely adhered to the Miwa Somen factory "Tamai noodle factory" from 3:40 am. We had them show us a lot of the manufacturing process over two days.
At this time, the finest somen "Milky Way" is made.
Let's take a closer look at the process of making Miwa Somen noodles in Sakurai City, Nara Prefecture, which is said to have the roots of Japanese somen.

The work that goes in to this process is unreal. How did I get so absorbed in watching how noodles are made? We learn so much by watching how things are made in countries around the world. Very interesting video. Greetings from England 😊

Does anyone else want to sleep on a hammock of bouncy noodles or is it just me
I spent an hour of my life watching this and I have 0 regrets. In fact, I'm extremely pleased. So thank you so much for creating this and sharing the fantastic process that goes into these somen noodles. Which I now really want. Because watching food being made makes one hungry, or is that just me?
Thank you for your comment🥰🥰🥰
I would never have thought I would enjoy watching noodles being made for an hour, but I did! Loved watching the whole process and all the ingenious machines. Thanks for sharing this!
🥰🥰🥰
I work for a large food company, all machines are that: made of clever usage of speed, angles, bruches or cuting parts. Some processes are fast, over very slow. I love that.
any kind of process of making something, like any processing at all, is just mesmerising, you can watch this stuff for hours because its both incredibly fascinating and extremely satisfying to see the results of all the work someone does.

Japan does that to people
The hard work and dedication that goes into making these noodles is astounding! Makes me appreciate the product more than ever ❤
I’m amazed how much hand work goes into this process. It is a joy to watch and gives me a whole new appreciation for the artists who do this.

Parabéns! Nunca imaginei que fosse tão trabalhoso. Parabéns pelo trabalho, limpeza e organização.
I have totally enjoyed watching the process of noodles
Has no idea of all the hard work was involved and machinery needed. Amazing watching.
Thank you for your comment.
¡Disfruté la elaboración de principio a fin...! ¡Excelente...!
My grandmother ( from the coastal area of Zhejiang, China) also made these noodles, in basically the same process, and they were made by hand . It is pronounced "su mian" in the dialect. I remember as a child running through the wooden racks where the noodles were drying, and the light falling on my face through the noodles.
Thank you for your comment.
What a lovely childhood memory :)

Thank you for your comment! I'm happy to have a video showing how they are doing a great job🤩
Perfeito. Achei fantástico todo o processo de fabricação.

I will NEVER look at a packet of noodles the same way again.
I love how almost all of the machinery in that factory is on wheels (so basically everything's modular and can be taken in or out depending on where they are in the process).
And the different noodle-stretching machines! They absolutely astound me. Someone had to think carefully about each step in the process, how far the noodles needed to be stretched and what motion could do it without breaking them.
Thank you so much for sharing this video, and thanks to the company that allowed us an inside look!
Great video, kudos to the film maker, kept it interesting, great panning, no jerkiness, and of course all the production people involved. Enjoyed the whole process. Very labor intensive! And, no irritating music. Thanks.

When watching this video, I was amazed at the time it took with modern day machinery, it made me keep thinking about how long it must have taken 100 years ago. I know this process was in a factory to make up 1,000’s of bundles in those 2 days, but still the process to make 1 bundle or a 1,000 still is the same. Today’s noodles were all perfect in length and thickness.
Imagine 100 years ago, kneading the dough by hand, age it, knead the aged dough into desired size and thickness, several times, aging in between, once that’s done, then the noodles need to be stretched several times to desired length and thickness, drying them, stretch and dry again and finally after 2 days, you can finally eat your wonderful hand made Somen noodles. Amazing dedication to their craft.
Thank you for your comment.
I was surprised that you were very familiar with this noodle.
I am very honored to be able to show you a video of their devoted work.
@@food_star They all deserve a good meal with their noodles on their birthdays ... I have seen a master do this by hand and now a machine do it and the only difference is the hands here loaded and unloaded the machines otherwise it was as exact as the by hand method ...
@@pmbbmp I have had those and by far beat the store bought name brands in north america ... but these are another level entirely ... I have had both at one time in my life ... and the flavour is like the difference between a jalapeno and ghost chili .. yes the faster hand pulled versions are excellent ... but these are following a master maker in every step of the process ... not just a learned student ...
@@food_star Thank you for showing us their wonderful process, is there somewhere you can oder their noodles online, or do they have a website? thanks..

I don’t know why all these Japanese bakery videos popped up on my feed but it’s been interesting seeing the different breads they make and now noodles.
Absolutely fancinating thank you so much putting the effort into producing such a high quality product. It's beautiful watching the harmony that exists between the people (family?) as they work at something with a long tradition. I did enjoy watching this! D💜
Thank you for watching the video! And thank you for your comment🤩
They work smart. They treat the noodles like a real VIP. It's worth every minute watching this from start to finish. There can never be another factory like this because all their equipment are purely fabricated for this factory only, and it takes years to calibrate them to such precision.
Thank you for your very nice comment. I will do my best to post videos that you like.
@@food_star What impressed me the most is the realiability of those machines! Unlike the Made in Japan electrics. However I beieve there's space for better lubricating the bearings, oc couse with food grade lubricants,
I will never sigh over the price of somen again. Appreciate your tedious effort, quite grateful.

Very interesting. Seems like a very overwrought process but I guess they've been doing like this for ages. Going from one guy and his big ball of dough, to dozens of workers and their superfine noodles. I've had these before and will certainly think of this the next time.

This was insane! Respect. I strongly believe that this whole process has been designed by Leonardo himself. No offence meant but safety wise, there are so many questionable things here: pullies, belts, chains, turning wheels, and all them with no cover/protection whatsoever: very tricky and difficult to imagine what happens if something goes wrong. The level of hazards here is "red". Hygiene wise too there are some questions: all these machines are painted, with oil leaking from all over the place: no stainless steel anywhere. I am not sure why. Anyway: these people and the ones who designed these machines: respect.
Thank you for your comment.
I told myself in the USA this process would be shut down due to lack of.... what ever. and this whole age old process would be lost. So amazing to watch! Thank you FOOD*STAR for this very interesting video!
I really disagree with all those comments. The workers are experts and understand the machines very well. Sure, all this could be made more compatible with 'western' sensibilities but so much tradition would be lost. I bet the noodles wouldn't taste as good either.

I love all the old machinery. I think I would find this work very satisfying. Artisan noodles…a quality product.
Thanx for theses fantastic workers! Hope the owner pays well for you!
Wow, what a lot of hard work went into making those delicious looking noodles!
I am curious as to what happens to all of those broken pieces that are left over from the process?
Thank you for your comment.
Debris seems to be discarded or shattered and reused.
In the video it showed them grinding the left over pieces up into an almost flour like consistency into paper bags and then the bags it was in was taken into the area where the video first started, to be reused in the next batch of dough they make up.
Simply amazing

Nowadays we see Japanese-noodle-ALIKE everywhere all over the world, but they are nothing like real Japanese noodles - totally different texture. Once you experience real ones, you know others are just quickly-made-gimmick noodles! I am one of lucky ones who had a pleasure experience in Japan.

Amazing devotion to process and quality. Thank you so much for sharing! Learning to make pasta and noodles has been a humbling journey. It's amazing to find the depths of one's ignorance! I am curious about the process around 9:30 in your video. What is the reason for combining two strands of dough? Before that, I thought all the work was to make them longer and narrower?
