Spicy Noodles with Kimchi [Wife's Cuisine]

- It’s good to have noodles in warm broth, but just looking at this spicy noodle will water your mouth. Chop some well-fermented Kimchi to the flavor. You wouldn’t need any other unique ingredients to make it tasty. A bowl of deliciously placed spicy noodles will make your meal complete.
[Spicy Noodles with Kimchi Ingredients] 2 servings
- Ingredients: 2 Cups Well-fermented (Sour) Kimchi, 200g Thin Noodles, 1/2 Cucumber, 1 Boiled Egg, A bit of Sesame Seeds- Spicy Sauce: 2Tbs Red Chili Paste (Gochujang), 2Tbs Vinegar,2Tbs Oligosaccharides, 1Tbs Soy Sauce, 1Tbs Sugar, 1Tbs Cooking Wine, 1Tbs Sesame oil, A bit of Pepper
[Instructions]
1.Chop Kimchi into thick pieces and mix with spicy sauce ingredients. Cut cucumbers into long strips and cut the boiled egg in half.
2.Put the thin noodles in boiling water and stir well to keep the noodles from sticking together. When the water boils up, pour a half cup of cold water. Repeat this 3-4 times until the noodles are cooked.
3.Wash the noodles in cold running water to remove starch. Place the noodles on a strainer.
4.Hand mix the noodles with kimchi and spicy sauce.
5.Place the spicy noodles on a plate and top with cucumber, boiled egg and sesame seeds.

In case anyone wonders, oligosaccharide is either Corn Syrup, Rice Syrup or Cooking Sugar.

Kimchi has a strong funky smell when mixed with noodles. The dining room has such a lingering smell of things kinda rotten. Any way to remove that smell while still enjoying kimchi?

But very different tastes :) I think that's the beauty of korean food. Korean ancestors were able to create so much variety with similar ingredients. They were very knowledgeable about what kind of tastes each natural ingredients bring out and used them to their fullest potential. Sometimes its astounding how much experiment and thought went into producing a single dish or ingredient especially knowing that much of these dishes were invented hundreds of years ago.

The type of Korean ingredients are far over the expectations you have cuz we have the three area of the sea which has different temperature so that variety of fish live and the many mountains and fields which can agriculture the rice wheat and the others.
석회암 i have been watching many videos of korean food and i noticed that you use onions, garlic, 고추 가루, 김치and others in most of the food, so I thought maybe the taste very similar. In arab countries we really use so many different ingredients and spices and the taste even changes from one house to another so i just end up comparing both cousins with each other
