Might have to do that the next time I go to my local Korean bakery. I think I'll brown the ham first and use chives instead of parsley though. (Chives and scrambled egg are a match made in heaven.)

I love Korean toast sandwiches. I made an identical one that I saw a street vendor make and it was topped with frosted flakes. At first I thought "gross", but it was delicious 😋🤤
I often now make membosa when I want a fried snack. It's so delicious. I'm saving for a Zojirushi bread maker and I'll be eating sandwiches for the rest of my life 😂 I think sandwiches are my favourite things to eat. But then I have a slight bread addiction!

When eggs are ready, flip the whole thing over and cook the other side. Fold egg onto bread. Now add your ham, cheese and a sauce, like STRAWBERRY JAM and fold the entire sandwich onto itself and serve. Delicious!

I absolutely want the Japanese style of white sandwich bread...I wish we could buy it locally but I don't think it's in any of the grocery stores in North Carolina.

Try baking your own! It's a really easy dough if you have a stand mixer. About 15 minutes of active time, an hour of waiting, another few minutes of active time, another hour of waiting, half an hour of baking. To get it into that square shape you'll need a pullman style loaf pan (see: US Pan).
