  • Pulut Tatal (Blue Glutinous Rice Cake) is one of the popular Nyonya Kuih. It is commonly known as Kaya Kuih, because it usually eaten with kaya jam. It is made by steaming the glutinous rice and pressing it with a heavy object or a mortar to make the cake firmer and taste chewier. Therefore, another name for the Blue Glutinous Rice Cake is Kuih Pulut Tekan and Pulut Tai Tai which comes from the way it is made.
    My most impressive and favourite of Nyonya pastry is the Pulut Tatal. Perhaps, the Nyonya pastry that I first came into contact with as a child was the Pulut Tai Tai. The eye-catching blue colour let me feeling fascinated and impressed. According to the Nyonya wedding will surely treat Pulut Tai Tai as one of the desserts after dinner.
    Pulut Tai Tai is not difficult to find in the Kopitiam or wet market. Every time I'll buy a few pieces for after-meal dessert, with sweet and delicious caramel Kaya whether it is breakfast or tea time, it's a particularly satisfied Nyonya pastry.

    🌱 INGREDIENTS
    - 300g Glutinous Rice
    - 200ml Thick Coconut Milk
    - 100ml Water
    - 1tsp Salt
    - 3 Pandan Leafs
    - 1 Banana Leaf
    - 50pcs Butterfly Pea Flowers
    👩‍🍳INSTRUCTIONS:
    1. Cook the blue flowers to get a nice blue colour and let it cool down.
    2. Wash the glutinous rice and divide it into two bowls. Pour water into one bowl and pour butterfly pea flowers water into the other bowl. Soak overnight or at least 4 hours.
    3. Dry the soaked glutinous rice and place it in a large plate. Put pandan leaves and pour in the coconut milk (thick coconut milk, water and salt) mixed with salt.
    4. Put glutinous rice in a steamer and steam for 30 minutes, then simmer for 5 minutes. After that, take out the glutinous rice and stir well.
    5. Put the glutinous rice into the mould had banana leaves.
    6. Press it again with a heavy object for at least 2 hours to make the glutinous rice cake firm.
    7. Slice it up and eat it with caramelized kaya to taste the chewy and delicious Pulut Tai Tai.
    ♥️Tips:
    1. The blue colour glutinous rice soak for overnight, the effect colour will be more rich and bright.
    2. Using a stainless steel plate for steaming glutinous rice cakes can be heated evenly. And the steaming time can be adjusted.
    3. Use water bags to suppress glutinous rice cakes is my method, because water can become any shape you want, so no need to prepare two same mould. Please set a few more bags to ensure that the bags do not leak.
    4. The time for pressing Pulut Tai Tai is to let the cake cool and set.
    5. The blue flower can be stored longer and use on anytime after sun-dried.

    藍花糯米糕是娘惹糕點的經典之一,椰香味兒十足口感軟糯。俗稱之為咖椰糕(Kaya Kuih),因為藍花糯米糕一般上都是搭配咖椰吃。製作藍花糯米糕是在糯米飯蒸熟後用重物或石盅來壓制讓糕體變緊緻吃起來口感比較紮實有嚼勁。所以,藍花糯米糕的另一個名稱叫Kuih Pulut Tekan或者Pulut Tai Tai 的由來自于其製作方式。
    對于娘惹糕點印象最深刻和最喜愛的就非藍花糯米糕莫屬了。也許,小時候第一次接觸的娘惹糕點就是藍花糯米糕的關係吧。藍花糯米糕那奪目迷人的藍色,讓我看著很著迷而印象深刻。相傳以前的娘惹喜宴都必定會把藍花糯米糕當成其中一種飯後甜點來宴客。
    藍花糯米糕不難在販賣糕點的攤口找到,每次都會買幾片當飯後甜點或者下午茶,搭配香甜美味的焦糖咖椰吃無論是早餐或下午茶都能讓人感到特別心滿意足的娘惹糕點。

    🔪 準備時間 :10小時

    🍽️ 份量 :8人份
    🌱 食材
    - 300克 糯米
    - 200毫升 濃椰漿
    - 100毫升 清水
    - 1茶匙 鹽
    - 3葉 香蘭葉
    - 1葉 香蕉葉
    - 50朵 蝶豆花
    👩‍🍳做法
    1. 把藍花煮出顏色後放涼備用。
    2. 糯米洗淨後分成兩碗,一碗倒入開水另一碗倒入藍花水浸泡隔夜為佳或最少4小時。
    3. 把浸泡好的糯米水份控乾後盛進大盤,放香蘭葉再倒入混合好鹽巴的椰漿(濃椰漿、清水和鹽)。
    4. 糯米放入蒸鍋大火蒸30分鐘後再燜5分鐘,拿出糯米飯攪拌均勻。
    5. 把攪拌均勻的糯米飯分次放入鋪好蕉葉的模具。
    6. 再用重物壓在上面最少2小時讓糯米糕變得緊緻。
    7. 把攤涼後的糯米飯倒扣出來切片,搭配焦糖咖椰吃口感軟糯美味。
    ♥️小貼士:
    1. 藍花煮成水隔夜浸泡糯米出來的效果顏色會比較濃郁鮮豔。
    2. 蒸糯米糕的器具使用不鏽鋼盤子受熱比較均勻,時間可以自行調整縮短。
    3. 使用水袋壓制藍花糯米糕是我的土法,因為水可以變成任何我們想要的形狀,所以就無需多買同樣的模具。請套多幾個袋子確保袋子不漏水哦。
    4. 壓制藍花糯米糕的時間是為了讓糕體攤涼定型。
    5. 把新鮮的藍花曬乾或風乾後可以收藏起來,在必要時可以派上用場。
