      hyper thonk it’s a type of steak. A5 is the grade of the steak (it’s a fantastic grade) wagyu is the type of beef it is made from (one of the best there is if not the best) and marbling score 7 is how much inter muscular fat there is on the stake. The higher the score the more fat and the more juicy, tender and flavourful your streak will be. The score only goes up to 8 I believe so 7 is a phenomenal score. :)

    Tip for removing fat: put the container in the freezer. The fat will solidify before the liquid freezes and will be easy to remove.

    This reminds me of Spam Musubi. That's a favorite in Hawaii, and a Hawaiian chef made it for a convention I worked at for a few years. People hear "Spam" and make a face, but this is truly great stuff. It's Spam cut into thin pieces and cooked with a sort of Teriyaki sauce, then pressed into rice like Guga's Pokemon food, but with some furikake sprinkled on the meat for seasoning. Then the whole thing is wrapped in nori. It's very common in 7-11 convenience stores in Hawaii. I suspect that Spam Musubi is related to this dish.

    Guga is really a master, he is insanely creative and manages to put his own spin on everything while still staying true to the roots of the food yet without being snobbish or pretentious. His channels really have evolved to be my favourite food channels on CZcams and every time I cook his recipes (and I do that quite often) my wife has a jaw-drop moment.

    You CAN make that with Jasmine rice. Wash the rice 2-3 times by tumbling it in water with your hand in a bowl first. Then, soak the rice in water for an hour or even longer and rinse off all the starch. Then cook it and it will be sticky rice. It is very possible and if one hour is too sticky for you, try 30min.

    Tying the pork belly by chinese tradition is because we use claypots over charcoal stove, which the heat can boil and scatter the meat if it isn't tied up. But using Sous Vide i think you can skip it. Unless the packaging is stirred or moved too aggressively.

    The string helps the meat together, but Dongpo Rou has a story of it being a gift, so that may be part of the reason why it's "wrapped".

    Alternatively, for removing the fat gravy separators are cheap and a lot easier. OXO's model has a plug that keeps it from getting fat up into the spout, as well.

    Guga, thanks for all your videos! I got my sous vide machine recently and it quite literally changed my life 😂
    One question: can you please do a "basics" video discussing your process for deciding cooking times? And it would also be awesome if in every new video, you explained why you decided to cook for that duration. In this one, why 8 hours? I know you said it would give it time to be tender, but why not 7? Or 6? Have you done experiments and determined that 8 is best? Grande abraço!
