Quick Bread, Fish, Fritters & a Cat Friend in my Italian Kitchen

My faithful companion and I spent many hours in the kitchen preparing a quick bread and fritters, both utilizing carrots and zucchini. One of us was more helpful and adept than the other.😜 Thanks for joining us! Below you'll find both recipes. Happy baking/cooking!
Carrot Zucchini Bread
1 egg
1/8 cup pure maple syrup
1/3 cup neutral oil
1/4 cup granulated sugar
1/4 cup Greek yogurt
2 tsp vanilla extract
1.5 tsp cinnamon
1/4 tsp ginger
1.25 cups flour
1/2 tsp baking soda
1/2 tsp baking powder
A pinch (1/16 tsp) of salt
1 cup of grated zucchini (squeeze out excess moisture)
1 cup of grated carrots
Mix ingredients per video instructions.
Grease and flour a 9 x 5 inch loaf pan.
Preheat oven to 180c (160c fan) 350F
Bake for approximately 55 minutes.
Carrot Zucchini Fritters
1 egg, beaten
Dried parsley to taste (fresh preferred)
Dried chives to taste (fresh chives or green onions preferred)
6 roasted cloves of garlic
1/2 tsp salt
1/8 tsp black pepper
1/3 cup flour
1 cup grated zucchini (squeeze out excess moisture)
1 cup grated carrot
oil for pan frying
Follow video for mixing instructions. Fry each side until golden brown and sprinkle with salt immediately after removing from pan and while resting on a paper towel lined plate. Serve alone or with a dollop of sour cream or tzatziki.
Cod
I pan fry my cod in a combination of olive oil and butter and use whatever spices are calling to me that particular day, although my Hungarian sweet paprika is almost always on the list! Fry until golden on each side and flakes in the middle. Easy and quick!
