Why normality tests? Why dont we implement poissonity test? What makes normal distribution privileged among other distributions?

For Continuous Variable data Normal distribution is required. For Discrete Variable data other distributions are done. Also to study a specific trait or variable in a given population parametric tests are done. For parametric test checking Normality of the data is essential.
