Cast Iron Cooking in the Off Grid Forest Kitchen | Corn Bread and Beans | Axe Repair

    Hard at it (not really) in the Forest Kitchen, this time I make vegetarian baked beens with corn bread, baked in the primitive earthen oven with maple and cherry wood for added flavor. It's almost vegetarian - if you look closely, you may notice a couple of pieces of leftover bear sausages thrown in there. I talk about my axe and firewood too, making a few small repairs between checking on the meal in the oven.
    In case you're seriously interested in the recipes (if you can call them recipes), here they are;
    Baked Beans
    2 cups any dried beans - soaked overnight or simmered for a couple of hours ahead of time
    1 onion
    1 can of tomatoes
    2 cups of water
    1/2 cup of maple sugar or maple syrup (NOT corn syrup)
    Random fresh vegetables
    To taste - garlic, Old Bay seasoning, pepper, hot sauce, hot peppers, salt, pepper, hot sauce...
    Simmer until beans are soft. Better the next day
    Corn Bread (I doubled this recipe) (I found this online somewhere, no recollection of when and where)
    INGREDIENTS
    * 1cup cornmeal
    * 1⁄2cup flour
    * 1teaspoon salt
    * 1teaspoon maple sugar
    * 1⁄2cup milk
    * 1⁄2cup boiling water
    * 3tablespoons cooking oil
    * 1egg
    * 1 1⁄2teaspoons baking powder
    DIRECTIONS
    * Grease an 8-inch round or square baking pan. Preheat oven to 425. Place pan in oven to preheat.
    * Combine cornmeal, flour, salt, and sugar in mixing bowl. Add corn oil and use a cutting motion with spoon so that oil will be well blended with other ingredients. Add the boiling water and mix well.
    * Add cold milk and stir. Let stand for a few minutes until batter has cooled to room temperature.
    * Mix in egg and then baking powder; beat briskly.
    * Remove preheated pan from oven and pour in batter. Bake until lightly browned (approx. 20 minutes).

    I love watching Cali with the toy...."hey dad, I know your busy but.....throw the toy, throw the toy!" Your the best! Everything you do is so inspiring. You and your lifestyle encouraged me to leave the big city and relocate to a small town where I can now work towards my own small homestead. Since I'm a single mom with a disabled child, it'll take me a while, but at least I'm closer than I was a year ago. Thank you Shawn so much, your my off grid mentor!

    I lay my iPad on my pillow play your videos one after the other, I realize the noises every nuance of sound is so soothing and calming it puts me in a sleep mode where I’m half awake because I continue to hear the rustle of the leaves ,the hammering, the wind, Cali breathing its the most calming sounds I’ve ever heard this is pure mind heart therapy ❤️

    Three Canadian channels are much alike, very soothing in their own ways. Buckin Billy Ray (Smith) from BC cuts trees and splits fire wood blended with his unique goofy humor and passion for axes. Living Off Grid with Jake and Nicole follows the adventures of a young couple building/living in a yurt on N.Vancover Island. Her charm is worth the ticket. Then Shawn and his bride. I think the secret are the sounds of snow crunching, of a kindling fire crackling and food frying. And of course, the star of the show, Cali. Its all so good, have no time left for network TV.

    It's always best to soak dry beans overnight in water before cooking (and drain water before adding fresh water), but your method seems to work too. Great that you're all set up for colder weather and how nice it will be to take a sauna and roll in the snow this winter.

    A useful energy/time saving tip when splitting firewood logs is to place them ( for axe chopping ) inside a tyre ? so they don't fall to the ground. This saves your back and reduces dampness if the wood were to fall to the ( possibly) wet ground.
    Also offers protection to both the axe head and anything else ... if an axe blow misses. Lovely videos ... Thank you for sharing it all .

    Been many years since. Was about 50 Km from Val D'Or Qc, got a job select cutting wood. I still remember, on the first day, I was all alone on my parcel I was working and I started yelling .. as hard as I could until I couldn't yell anymore. Then I just sat there for what must have been hours, just enjoying the quiet and surrounding nature noises.That was the best relaxation I ever got. Watching your videos melts away the frustrations and stress I get from living in a big city. Wish you the best.

    Hey Shawn, how about making a greenhouse to help grow food? Make the frame similar to the other structures and clear panels from Home Depot. This would allow a longer growing season as well as a controlled environment. God Bless!

    You really know your oven more every year. More complex than a dial but doable & all by your own hands. Looked like a really healthy meal, full of flavor.

      My mom grew up on a farm....depression era baby.......no electricity in the house until late 50's early 60's....one naked light bulb hanging from the kitchen ceiling and a single outlet upstairs in the "living room" so granddaddy could watch his baseball and football games between farm chores. It wasn't until late sixties that they put in a stove with a fire box AND could run off propane, so my mom grew up with only a BIG wood fired stove........mom said she, her sister and grandma could tell, just by looking at the fire, when the stove top was hot enough for cooking and/or when the oven was ready for baking and roasting. She said none of the wood stoves ever had a thermometer in the oven door.

      @@artistaloca4 Nope, grand daddy had an old hand--me-down TV with a set of hand-me-down rabbit ear antennae that one of mom's brothers brought to the farm when he was getting a NEW TV for his family. Grandma was lucky that grand daddy let her spend any money on books, or her favorite, a yearly Reader's Digest subscription.(When we had to move grandma to assisted living and we cleaned out the farm house, we found boxes and boxes of those reader's digests going back to the 40's and earlier. I brought them home and steadily read through them while recuperating from surgery. Good reading, much better than current RD's) Grandma was a reader. Grand daddy didn't appreciate being educated. None of his 6 sons completed high school. All 3 of the daughters did. My mom said she was always having to fight for time to do her homework. Sitting up late at night was not an option because of the cost to burn candles or oil or kerosene lamps. Both my mom and her older sister left home the day after graduation to "get the hell off the farm". Both went to "the big city" (ha-ha) with what little clothes they owned, and got jobs at a "defense plant" and shared a room in a rooming house (no board, they took their meals at the plant cafeteria). Mom met my dad at the rooming house. The rest is history. And here I am watching youtube videos. :0D

      @@richardsabean5781 Grandma's all wood stove was this big hulking monster of a cook stove. Had a big, I mean BIG water tank on the side for hot water. Mind you there was no indoor plumbing in the house until the late 1960's, when my uncles deigned to run a water line from the kitchen porch thru the wall into the kitchen over to the sink (sink drained to a pipe that ran thru the wall outside to the grass on the hill surface(in the late 50's/early 60's they put a submersible pump in the spring in the little spring house, then ran a reinforced water hose on top of the ground with a piece of angle iron over it, up to the kitchen porch to a big concrete "set tub" that came out of our basement (when my parents had our basement "knotty pined"). That was nice cuz then when we kids would be playing on the farm, we had lots of ice cold water to wash up in. Later in the 60's the uncles eventually installed a water heater in the kitchen. Bathroom facilities was still the out house or the guys going up over the hill behind the house out of side (during warm weather that was). Grandma did not have a fully functioning bathroom until early/mid 1980's and not until my mom shamed the uncles, who lived near the farm, to build a room addition, put in a septic system, drill a proper well, and make that addition a bathroom for their mother. (had to do indoor plumbing too to get the water up stairs) That was a very old farm house. It was old, very old when grand daddy bought the farm back around 1929/1930 ( the farm had been abandoned a very long time) An old german style farm house built into the side on a hill with only 2 exterior walls exposed (one end in a hill, as well as the back). Gosh how I miss going to the farm. I was/am a city kid. Wish I could have bought the farm, 40 acres on one side of the road, another 10 acres of wood land on the other side.

    i'm so glad i've found you fantastic videos here. i remember from very young age i've always wished to have a life like yours , right middle of woods , great scenery , peace and quiet with just sound of nature, bird and animals, water hitting the beach and leaves landing on the grand from trees a beautiful sunset , and most of all , your beloved gorgeous dog which make you smile everytime by asking you to play . it really is amazing and priceless . welldone body . i'm so glad at least you're enjoying the life . keeping them coming son , you're the man we'll need to learn from . best regards xx

    Thanks for stopping between your work and explaining things you’re doing. I love how you explained how to arrange fire wood for better drying. BTW Cali’s breathing isn’t very loud when you’re talking. Thanks for the details of how you’re going to fix the loose Axe head too, with Linseed oil. Also what you need to do with the oven. When you’re adding ingredients before cooking. These things are so valuable to us. I really appreciate how you explain what you’re cooking... Ok, you stopped explain for one recipe but I loved the way you did this video. Absolutely Fantastic way of handling and presenting this video. Your videos just keep getting better and better.

      I don't get it either. These videos are so relaxing to me...what's not to like? All I can think of is there must be some SJWs out there that this offends, for some reason I simply can't fathom. Are they pissed he's not gay or something? Who knows how some minds work.

    Open flame.
    And in my own oven..and well inspirational from Shawn... Thank you so much sir!
    And had my neighbors standing, smelling my good home cooked meal.

    I’ve been having a tough time finding a job that can pay my bills and allow me some time to spend with my family at home . I am not so sure how this relates to your videos maybe I’m just looking for away to be free from the daily work nightmares like you and find my place with the world again

    Hey Shawn! I love watching these videos as soon as you upload, been following you since the beginning and something I would love to request is if you could do a breakdown in a later video of your first aid supplies, medicine on hand, emergency supplies, and things of that nature. God forbid you sustained some injury or got ill, how would you address these scenarios? Thanks for all the amazing content!

    I make baked beans almost the same way, except I use unsulphured molasses instead of maple syrup, and no hot peppers. If I make it with meat, I use organic grassfed ground beef. My recipe came from my dad, who got it from his grandmother who raised him. My great grandma was born about 1870, great grandpa in 1865. Yes, it definitely is better the next day, and I always have homemade cornbread with it! Small world! Watched this with my morning coffee, but commenting at supper time. Worked outside most of the day. Still doing my own outside chores at 76! Cali's panting didn't bother me, but sure got Gaspars' attention!

    hi shawn good idea soaking the axe keep it usable as long as you can. every one is saying cold winter all over but here in oregon we hear a milder one'' i will prep for the cold with the changing weather patterns we keep seeing 'with the weather getting colder beans and corn bread sounds good and looks very tasty'' the ending shoot is beautiful thank you and sweet cali girl hugs to you both.

    There's work to do, there's food to cook, there's tools to fix, there's veggies to pick, there's wood to chop for winter, and there's this wonderful dog right there ,with a wagging tail saying, "come on. lets play a little", and you do it all at the same time, in a place that we all envy you to have our selves. WHAT A LIFE, congrats, you did it. Keep it up, don;t give up and ignore the critics. Shoot they all want what you made for yourself, but don't want to do it themselves, so they criticize.
