In a strip mall on Colonial Boulevard, two cuisines collide through the literal marriage of Argentinian Mariano Maldonado and his Peruvian wife Rocio Navarrete. Mix in a little Italian, and you have the from-scratch cuisine of El Gaucho Inca. The team is preparing 500 meals for hospital workers and first responders during the pandemic, while offering takeout for its popular ceviches, lomo saltado, grilled meats, homemade pastas, and other specialties. Curbside delivery is available in some areas.
