Why is There WASABI in Sushi?

    • Shogo’s Self Introduct...
    We use raw fish to make sushi, so wasabi was helpful for preventing any sicknesses that could be caused by it. Nowadays, wasabi is also attracting attention for its ability to prevent cerebral thrombosis and myocardial infarction, and even alleviate the symptoms of hay fever.
    The culture is believed to have started around the last half of the Edo period when the 和食 washoku culture bloomed, so the combination of sushi and wasabi could have existed for
    more than 200 years. Recently, there are more and more people who dislike wasabi, and at the cheaper sushi restaurants and packs sold at supermarkets, it has become common for sushi
    to not have wasabi in them, but provided separately.
    While some say that the separation of wasabi will help sushi to become more popular abroad too, others say that we are losing a very important part of our traditional food culture.

      If you have a Wegmans nearby go there. They serve their sushi with real wasabi.

      I've had it at Morimoto's but it cost extra. They allegedly use sharkskin to grate it.

    In my opinion, wasabi is key flavour in sushi. It gives a tang that can’t be found in the fish, and is actually quite refreshing.

      Idk, for mee I feel like it just add spice but not really any flavor, the soy sauce provides a mild but better tasting tang for me.

    Nothing clears the sinus like wasabi. I like the kick it gives to my sushi as well.

      It doesn't clear the sinuses. It irritates your sinuses and causes them to produce more mucus.

    I mean, most Wasabi sold in the west is not much Wasabi and more Horseradish with food coloring

      @@warlordomegaxzy Yes, because wasabi root is expensive. Sure, if you're eating at a $200 a person omakase place, the wasabi is real. But if you're having conveyor belt sushi or $25 a person sushi dinner, the wasabi is going to be the horseradish stuff.

    Don't stop the Wasabi, I love it! I liked it so much I mix it in my tartar sauce with fish sandwiches, with mayonnaise in turkey or roast beef sandwiches, or even to spice up some of quick and easy Ramen noodle bowls. Last year we grew some horseradish in our garden, but it didn't make it and died off by harvest time.

      You're pretty similar to me, except replace that with "Chinese mustard" or Chinese brown/hot mustard. I'd eat it on almost everything, and the kind I most liked was so spicy that it'd help clear my sinuses.
      I legitimately had a collection of at least 6 different types or kinds from different take out places in addition to the grocery store, I'd just stock up on them. Some foods, like a tuna sandwich, in my personal opinion, tasted like it was MADE to go together.
      Just my two cents obv.

    I've only ever had western wasabi, which is a horseradish mix, but I like it a lot. I'd love to try true Japanese wasabi someday.

    it is just like putting cream in the carbonara sauce... it is something that is made for "praticality", but it also somewhat destroys the original recipe and becomes something similar, but very different at the same time.
    the wasabi used in sushis at proper restaurants is very different from the ones we see being sold "broadly" today. some/most currently served/sold wasabi taste/feel (texture) terrible, so I agree that for most "packaged" sushis it should be put appart, as it is most of the times a terrible quality wasabi. But at good restaurants, it should be made with fresh wasabi, unless the client especifically asks to remove it.

      because most of the "wasabi" you saw on the market are not real wasabi, it is horseradish dying green. The real wasabi taste a bit more sweet and a lot less spicy kick in the brain.

    It can alleviate heart attacks, I never knew that and I definitely need to remember that because heart attacks are common in my family.

      Most of these studies claim these things say that it only helps a tiny bit. The best prevention is eating healthy and exercise for at least half an hour.
      But at least Wasabi is healty unlike red wine studies that say the same thing about blood pressure.

    Wasabi is delicious-in small quantities! :D I don’t know why hot chiles don’t bother me anywhere near as much as wasabi, horseradish, and mustard. But, real wasabi sells for over $100/lb in the US, or over 20,000 JPY per kilo, and it’s only available in major cities like New York and Seattle (a small city with a large Japanese American population).

      Cilantro tastes like soap to me, but culantro doesn't, and it's a little stronger. I like horseradish, and I also like wasabi. I like different kinds of mustards, too, depending on the food. As for sushi, it's all about the rice, fresh fish, and just the right amount of wasabi and soy -- NOT mixed together in a wee bowl...I still don't get that.

    Hello! Love the video. For anyone wondering, cerebral thrombosis is essentially a brain hemorrage, or bleeding in the brain. Mycodardial infarction is also the medical term for heart attack. So it seems wasabi has some pretty great health benefits!

    I found eating wasabi really painful! The pain behind my nose was really bad, and I'm very used to hot chillies in my food. But the antibacterial qualities of wasabi have given me a newfound respect for it. Interesting!

    I love wasabi and horseradish (if wasabi is not attainable) with sushi. I love how it feels refreshing on the palate together with the raw fish. Yum

    yeah, wasabi can hit your nose horribly, but its flavour still good n very distinctive.
    As non Japanese I don't mind to eat wasabi. Wasabi gives a character in Japanese cuisine, n of course, the uniqueness of sushi.

    Send more wasabi, Japan! So many of us love it. :) (Especially since I can't really have so much spicy food as I always liked, strong flavors are harder to come by. I like to make my Wasabitage turkey sammiches. :) )

    Oh yeah, I can testify how well wasabi is in clearing the sinuses.
    I would like to try sushi with wasabi included in the roll, not just included on the side.
    It'd be much better than the annoyingly popular American tradition of putting avocado in sushi rolls.

      I hope you realise they eat avocados in Japan, too. Stop putting Japan on a pedestal and idolising it. Japan is a modern nation that engages in modern international trade and exchanges cuisine ideas globally. Japan even grows olives and makes prestigious extra virgin olive oils and whiskeys.

      Then maybe order nigiri, instead of maki. Far too many maki in America are often made to suit American palates, for all that avocado and other things are found in maki created by Japanese sushi chefs. Nigiri are just as often nothing more than sushi rice, fish, and a dab of wasabi, with maybe a sauce smeared on top, and might be more up your alley.
      (Also, just as often there *is* wasabi in the roll, but the intended amount is often so subtle that you're not going to get a burn or anything more than a complementary flavor. If there really isn't any, then maybe you need to find a better place to get sushi.)

      @@Mokiefraggle I really like the avocado when I add some extra wasabi to it. A lil kick of spice with a nice sweet/buttery wash. I don't really get sushi often, it's more of a treat so I tend to go for something more extra. I'll have to try the nigiri sometime.

      Avocado can be great on sushi if done well, it’s all about flavour. I’d make gingerbread sushi if it tasted good, no culture is stagnant.

    I feel like Wasabi clears the taste palette, so a person may try different tasting/conflicting flavored foods more accurately.

    As a westerner I believe that sushi with and without wasabi has a place in the world. Rather than seeing it as competition or wrongness, I'd consider it a flowering of the culture it sprang from. Similar to how there is value in the existence of california sushi together with traditional sushi. The value of the original is not diminished, but rather enhanced by the offspring it begets with the different cultures it touches.
    And even if the original form disappears... Lets not forget that beer used to be drank warm. Nobody can deny cooling the beer was a great move.

    Hallo Shogo. Thank you for the interesting videos on traditional Japanese culture. Can you say something about the color of the katana handle/tsuka? A rack of katanas with different color handles looks beautiful, but it seems this is not displayed in traditional Japanese settings, outside of shops. Is there some significance to the colors?

    My first guess prior watching the video was that it prevents certain parasites and diseases.
    Anyway, I think Wasabi should be important for sushi to eat, otherwise the risk of food poisoning would rise amongst individuals.

      It does not prevent fish borne parasites. Flash freezing does. Although, I would not be surprised if large amounts of wasabi had antiparasitic effects.

    I usually spread a bit of Wasabi on top of sashimi before I dip half of the raw food into soy sauce. It can feel an explosion of flavors, partying in your mouth and you become addicted to it. But I'd never figured out the true purpose of the green ingredient. You never stop learning 😲

    I am someone for my whole life currently against Wasabi because I do not like the taste at all. It’s torture, I vomit every time I’ve tried.
    But now that I know it is claimed to have antibacterial properties and sinus clearing properties, perhaps I will attempt again to try to eat it. Perhaps I can develop a tolerance for it.

    The Wasabi available separately in Western Sushi packs and in plastic tubes is not real Wasabi, but a mixture of Mustard and other ingredients, and it tends to be quite a harsh flavour. It also completely lacks any texture associated with grated roots.

    the best sushi I ever had was at Japanese restaurants that had been traditionally run since wwii. only sushi I've had with the Wasabi already in it, and it's so much better. I can't even handle spicy foods, it just adds another layer of flavor that is so perfect.

    i actually had no idea that sushi was meant to just have wasabi in it, i've always seen it on the side. so i suppose in some way, separating them did work to bring it overseas, as that's always how i find it in the United States. frankly, though, sushi that just has wasabi spread evenly throughout it sounds much more delicious than adding a smearing of wasabi on just one part. also, for those wondering what those medical problems wasabi seems to combat are: a cerebral thrombosis is a blood clot blocking a vein or artery in the cerebrum, which is part of your brain. this can easily cause stroke, aneurysm, or other types of hemorrhage, which have a high chance of being fatal. myocardial infarction is the medical term for a heart attack, in which muscle in your heart is prevented from properly contracting and your heart stops beating properly, instead just vibrating in place.

    Long was the day that they put Wasabi back in Brazil. But most people do like it... the common habit is to mix Wasabi in the Shoyu and then dunk the Nigiri, rice first, into the mixture for the ultimate salty and hot sushi experience someone can have.

    In my country Singapore, takeaway sushi will always have wasabi packed separately. Chef in mainstream Japanese restaurant will not add wasabi to the sushi served. I only noticed wasabi in prepared sushi many decades ago in a traditional Japanese restaurant in my country.

    I used to mix soy sauce and "wasabi" (probably horse-radish) whenever I got eel sushi in college. It was definitely Americanized sushi, but it was delicious.

    There was an infamous wasabi incident in Osaka when some Korean tourists claimed the chef deliberately put too much wasabi in their sushi. An international incident over wasabi!

    I went to a Japanese restaurant where wasabi ice cream was on the dessert menu. If you've never tried it, you should if you can find it. It's absolutely out of this world.

    I worked at a japanese owned fish market & sushi place, and the only thing we offered the choice of no wasabi was with rolls, and sashimi, because wasabi wasn't already in the dish. Nigiri would have wasabi between the fish and the rice and that wasn't optional according to the owner. haha.

    I usually avoid spicy stuff but I love wasabi on my sushi. And if it is originally applied to prevent sicknesses caused by raw fish then I think it wouldn’t be too bad to preserve this culture 🙏

    In layman terms it helps prevent strokes and heart attacks.

    I'm an American who loves wasabi on hot dogs. I'm cultivating some here in the Pacific Northwest in the hope that the climate is similar enough.

    I am swedish and I love wasabi. We have sushi place near where I live ran by a couple young japanese women. Their sushi is great and always has wasabi with it. Honestly I don't know many people who eat sushi without the wasabi. Like, if you want japanese food or any exotic food most want the full experience I think (less it be something to weird)

    As a European I really like Wasabi. Don't understand why people dislike it. It's taste is unique. I don't eat sushi though, I don't like fish.

    As a foreigner who really likes Wasabi I wish it was in more sushi (it's almost exclusively served on the side here) bc it's really hard to get the right amount on your roll and then eat it without having the Wasabi hit that one spot in your mouth that makes you feel like you just got punched in the nose

    The stuff you get at most places where I live is just grated horseradish dyed green. Give me real wasabi any day.

    My family and I lived in Okinawa for three years and fell in love with Wasabi (amongst other things). We would often see who could eat the most Wasabi without tearing up lol

    Most of the "wasabi" served with cheap sushi isn't real anyway, it's just green horseradish paste with a tinge of wasabi flavoring

    I am sad to hear that wasabi is not being used anymore. It's my favorite spice and it gives sushi it's signature style and flavors. I am even excited to hear that it has health properties. I will definitely use it more often!

    I've always loved sushi /sashimi but I didn't always like wasabi. Today I have to ask for extra, it definitely grew on me! Love love love wasabi!

    That's funny, in America they still put wasabi(or whatever substitute they use for it) in the packs you buy at the store. I don't like it that much, but it's still there for people that do.

    Absolutely, wasabi is one of the best parts of japanese cuisine. Japanese food without wasabi is like mexican food without strong peppers.

    As much as I avoid spicy hot foods, Wasabi is the ONLY spicy item I will eat with Japanese and I actively seek it out.

    Once, my dad was cooking homemade horseradish (which is what's used as wasabi apparently in the "west") and the sheer act of walking in the room almost burned my eyes. I wonder if real wasabi has such a strong effect

    I only experienced the wasabi beside the sushi. Just put it onto the sushi again? Takes like 3 seconds to restore tradition.

    I onced tried the wasabi in Japan and since then i know wasabi is good. Back in my country the wasabi is kindda diffrent.
    Since we dont plant these kind of plants, so they had to make one. Lack of authenticity is the key here.

    I didn't know that wasabi normally is already inside of the sushi. But I would prefer it that way because it's difficult to get the right amount by yourself.

    My grocery store, has an actual sushi making station in there and they put Wasabi in the sushi tray. Ive had legit prepared sushi too and I will say the ones also at my supermarket is pretty good too, not as good, but up there actually.

    Im from the philippines and Wasabi is my favorite, i even use it to partner with my viand and rice.
    Ex.
    Fried chicken and rice
