    A year or so ago I camped for a couple of days on the Galveston beach TX. My brother and his wife who go there quite often (but stays in a fancy hotel) couldn't believe my view....which was for free. I was right on the beach. I'm going back.

    Discovery Channel needs to give Slim his own show. I like it the way it is though. No huge budget. I'm really hoping to see him do more backcountry, more northern Manitoba, more Yukon and NWT.

    My stomping grounds now. Welcome to Louisiana Slim. The pelicans you showed are the Louisiana state bird, and the crab on the beach we always called fiddler crabs. I laughed out load to see the man from Canada freezing his buns off on a Louisiana beach. That frigid humid wind has taken many a life of duck hunters lost in the swamps. 40° f, heavy humidity and wind; without the right gear is sure fire recipe for Hypothermia.

    3 can chili
    1 can of Hormel chunky chili with beans,
    1 can of diced tomatoes.
    1 can of pinto beans.
    Now dump in pan and heat up 20 minutes.
    Extra things to add.
    Ground meat,
    diced onions,
    1/2 cup Macaroni ,
    top with cheese , or sour cream.

    I’m surprised, living at a trailer with limited energy resources, i.e. bro pain, that you don’t use the “Julia Child“ method of cooking pasta. Basically bring the water to a boil, stir in the pasta, bring it back to a boil, then put it on the lid and turn off the burner. Let it just soak in the hot water for 10 to 20 minutes, depending on the type of pasta. I find the dried tortellini tends to take about 20 minutes or so. I have found that you can add a lot of flavor by adding some sort of seasoning or flavoring or even some bullion to the soaking water. In this case I can imagine essentially cooking the pasta in the V8, maybe with just a little bit of added water,. I may actually try that in the next day or two.

      My favorite pasta is angel hair. It's delicate and cooks very quickly. I would have substituted or added tomato paste to thicken the soup. It is fun to experiment. I do enjoy watching SP prepare these recipes sent in by viewers. I do not enjoy watching tv chefs cook complicated dishes. I could live on pintoes, cheese and cornbread.

      I would use coconut light with the soup and thin it with a little bullion cube and water. If you use crunchy peanut butter you be able to avoid needing to have peanuts on hand 😀

      Yes that is a nice comparison but l'd rather thunk of them being very complementary ships who are passing in the night.....each makes wonderful complements. I think David would really enjoy watching Slim....maybe brothers with different mothers!! 🤗

    As a kid up in Canada, my favorite thing was to dunk my peanut butter sandwich in my Campbells Tomato Soup. YUM! Love and Light to you Slim!

      The weather people say we get those beautiful southern sunsets from the wind coming off of Africa, bringing the desert dust high into the atmosphere and the sun reflects off of that.

    Not only are you going to find salt on/in your vehicles, you’re going to find blown sand in nooks and crannies for months or years. I learned the hard way driving a top down convertible on those beaches.
    I liked your soup experiments. I think using Campbell’s tomato in the fast soup recipe might give both speed and a better flavor and consistency. Thanks as always for taking us along with you.

    Had you cooked the pasta in the tomato soup, it would have been thicker from the starch of the pasta (I'm thinking).

    As a Texan, I think the Gulf Coast is not only a great place to camp, but the first thing I would do as a nomad. It's safe clean, beautiful, can collect shells, wade, swim in warmer water at times, fish, get a tan, clean air, exercise, see rockets take off from Boca Chica, eat great food, meet all sorts of people, have serenity and not have to worry about forest fires cause you can build a fire right on the beach. You can also see stars well and it's a great place for using telescopes, go boating. From Florida to the Texas/Mexican border there is more to see on the Gulf Coast than many states cumulatively have to offer.

    Huge fan & lifelong Mississippi Gulf Coast resident here. Can’t tell you how cool it was to see you boondocking in my neck of the woods! We’ve gotta get you a big bag of steaming hot boiled crawfish or crabs to devour next time you’re down here!

      Reminded me of my boondocking trip to the western side of the Delmarva peninsula on the Chesapeake Bay side (opposite from Chincoteague island on the Atlantic side. They are only separated by about 30 miles. I camped on a small peninsula in the Saxis Wildlife area. There's nothing quite like camping near the waters edge and view the beautiful sunsets.

    I grew up in SW Louisiana and visited Rutherford beach many times in the late 1960's - early 1970's. I am surprised it still exists, as many powerful hurricanes slammed that area since then. I suppose the state built the beach back up. Most often the water was chocolate in color and the beach strewn with seaweed and waste from oil platforms in the Gulf of Mexico.

    Lived in Louisiana for 23 yrs and loved to visit Holly Beach in Cameron Parish esp in the springtime before the heat, humidity, and crowds kicked in. great place for shelling, tho never boondocked, we always stayed in a cabin before the hurricanes decimated the area. thanks for bringing back memories!

    Mr Slim, you're so poetic🤗 This is why I'll likely never leave Louisiana.. for good. One of the worst sunburns I've ever gotten was on an overcast day, under a sunbrella.. next to the water. Ouch

    Wow, what a sunset!
    I put V-8 in my beef vegetable soup, adds great flavor.
    I made creamy mushroom soup yesterday and it came out delicious. Since you’re vegetarian I won’t tell you what’s in it.

    Having places like this to camp for a few days is just the best medicine for a person. I loved every second of being on the beach with you. Amazing sunsets glistening off the clouds, skimming on top of the waves slapping the shore. Awesome. Your little treasures were really pretty. I've yearned to seek seashells, have never done that. You can make Vegetable Soup with all your favorite vegetables & add the V8 32 oz. I make Country Vegetable Soup & it has a lb. of browned ground meat.

      since your vegetarian, omit the ground meat, use your own herbs, & spices. Your soups looked really good. I'd like to try the peanut butter tomato.

    Two soups reminds me of a comedy sketch by an English comedian named Victoria Wood called, you guessed it, ‘Two Soups.’ Might not be your cup of soup but look it up on CZcams, it might be worth a laugh.

    A variation on a satay sauce that sounds interesting. I've always liked Campbell's soups often accompanied by a cheese sandwich, so I'd probably leave the cheese in the sandwich. Then, I'd try adding some fresh ginger as well as the chilli 😋 That may be my Queensland taste buds. Ginger is grown commercially here. Something to try next winter.

    A fantastic sunset! Slim always satisfies my urge to see a bit of beautiful nature. We are all better off for his efforts. I can't believe any winter soup is all that hale & hardy without potatoes, real garlic, and real onions, which all keep really well at room temps. I'm not as brave as Slim to put peanut butter, which I dearly love, in with tomato soup.

      Some potatoes would have thickened his "Fast Soup".
      In his case a partial package of dried potato flakes would have been a great substitute, while still keeping it "fast".

    Boiled peanut warning. I'm from the South and have enjoyed boiled peanuts my whole life. I 'm glad to see you enjoyed yours, because there are plenty of people, even some southerners, who won't give them a try. My warning is that if you buy boiled peanuts from a small market, usually roadside, taste them before you buy them. Some sellers will reboil peanuts for several days which can give them a bad taste. Also, since salt is used in the cooking, they can be over salted for my palate. They are also available in cans in grocery stores.

    Just 45 min south from my home. Rutherford is a unique beach. It was wiped out during hurricane Laura in 2020. Most all of the camps were destroyed and there was a pavilion and shower area that was also destroyed. It is still a lovely beach. Welcome to Louisiana.

    Gorgeous sunset! I can't decide if sunset over the water or over the desert makes me happier! Did you meet the folks in the green bus? Sure is an amazing rig inside! Those soups were really interesting. I gotta try v8 for added flavor & nutrition! We made a veg split pea soup & it was GOOD! Onion, garlic, carrot, pepper, veg broth, a chunk of red pepper chopped & a wander through the spices. Very filling and warming. Nice place for a bit. I hope you found some trees after.

    Hi, Slim. I live East of where you are.......Alabama-Florida line. Peanut and tomato are a staple of certain African area cooking. I was introduced via a niece's Ghanaian husband. His mom makes chicken in a sauce of these. I found a recipe for a stew/soup with this base that includes eggplant and green beans. We have it over rice. Occasionally I'll add leftover chicken needing used up. I was smitten and wait every summer for my hubby's garden eggplant. Love your photography.

    best hardy soup ever. boil penne pasta, cook in tomato soup with a can of tomato past added, once noodles are done, add canned corn beef chopped up, cook for about 10 min longer then added chopped sharp cheddar , melt the cheese and then you have southern cheese soup.

    I love that beach! I live in Florida & drove out to Texas to pick up a Casita Travel Trailer I bought from the factory. I camped there on the way back to Florida. I intended to stay just one night but ended up staying 3 nights because I loved it so much. And I loved that I could see both the sunrise & the sunset on the Gulf there. I don't know if you can see both year-round there but in January you could.

    From South Africa.... Could be in S.A... .. Northern east coast between Cape Vidal and Sordwana.... Only known place in the world where dolphin have been observed PLAYING in the breakers..... Gòogle that , very significant expending energy PLAYING.... Anyhow slept under the stars woke up and coffee in hand had the priveledge of seeing them surfing the waves right in front of us. Us being me and a 14 Yo lad in welfare that was already well on the way to calling me dad... such are my memories.... Thank you Slim, thank you

    A simple meal my kids love is just some (COOKED) speghetti noodles or even egg noodles and a can of tomato juice (enough to cover the noodles). Season it with some ground garlic, onion, salt and pepper..add a little olive oil in it. You can sprinkle parmesan cheese on the top at the end..call it "noodles and juice". Its so simple, but children seem to like it.

    Wow this video moved me Slim. The sound of the beach and the views of the sunset were incredible. I am struggling with what to do with my life since my wife’s death. We were going to travel across Canada and into the US from time to time. I am living here in our home and cleaning up all the loose ends that come when someone passes. Once that is finished I will be free, free to do whatever I want. Me alone. Slim give me your secret, how do you do it? Thanks Slim for another wonderful video I can watch from the comfort of my couch. It’s keeping me safe and warm and stopping me from living.

      After losing my Mom on Dec 4th, my little half Sister Dec12th and my ex Son in law on January 9th of 2022, all i have left are my 3 adult children with their Families and Grandchildren.. I've had many hopes and dreams to travel solo as i did in the past, but could really use a much needed break in life to just breath...
      I'm truly sorry for the loss of your wife, trust me when i say this, she would want you to go and finish out those plans you both made together, she'll be right beside the entire time...live today like there's no tomorrow, as you know tomorrow is not guaranteed.... hugs from wisconsin ❤

    Slim, I live on the Nueces Bay, close to Corpus Christi. My wife and I drive down the Padre Island beach. The breeze is sometimes pretty stiff, so, no bugs. The sunsets and sunrises are magnificent. Thanks for sharing; your commentary and videography are excellent. Texas

    If you happen to come through Arkansas. You should check out The Buffalo National River. Areas of interest are Steel Creek (lots of good fossils along the bluffs) and Eureka Springs a charming town.

    Just like lowering the Flag at sundown….the awning goes up every night. Not only for the wind or maybe a pop up storm, but it rocks the camper and it keeps me up.

    Wow. Who knew peanut butter soup w/ boiled peanuts👍. I believe you little crabby friend is a ghost crab- they live in the softer sand closer to the brush. I am curious about the bugs. I am used to no-seeums attacking early morning and sunset. I am definitely going to try the peanut butter soup. Very enjoyable video- thank you for all your work 💋. 🙏✌️🌎💞

    I make something similar to Barbara's recipe, but use pasta, tomato juice, and cottage cheese. I use less juice, so it is more of pasta with sauce rather than a soup. Delicious with lots of fresh cracked black pepper.

    What a sunset. You keep going south and west it will be time to get you a quality pair of cowboy boots. Once broke in you can do most anything in them. Canadian father Texan mother the love of the west won me over.

    I especially like you trying recipes subscribers send you; v8 juice as part of a soup & peanut butter in soups. Yes, spinach is something I often add to soups.

    A good, delicious, nutritious, fiber-rich soup, elaborating on a canned soup: in it's simplest form, it's Progresso Chicken and Wild Rice, with a helping of Glory or Margaret Holmes mixed greens stirred in. Mixed greens are turnip greens and mustard greens, cooked together. Add hot sauce to taste, if you want. But other vegetables or meats can be added to it, too. Cutting up some more fresh or canned tomato into the mix is really good. Pieces of frozen broccoli or cauliflower, or some more cooked carrots.. A few southern peas or beans. And yes, a little cheese can be good, too.

    And I've got to admit, the tomato peanut butter soup, at first I was a bit "I dunno..." but after watching it go together you have me intrigued. I may just give that a go. I bet some roasted jalapenos would go pretty good in there.

    Boiled peanuts instead of roasted, brave move. Looked great.
    Here's a simple recipe. A can or two of Ro Tel tomatoes with green chilies, there are several varieties, a dollop of sour cream or enough to thicken, salt and pepper to taste, a little chili powder or red pepper flakes, Mexican cheese on top after serving, and a little extra spice with fresh jalapeño sliced thin after serving. I make this with chicken in the oven, but the soup that it makes after the cooking process is noteworthy. Maybe a little water while cooking since there will be no meat.
