- Bitter gourd fry in different style with out jaggery.
Ingredients
1/4 kg bitter gourd
1/4 kg onions
4 garlic seeds
1/2 tsp jeera
2 tsp salt
For seasoning
Oil, mustard,
chana dal,
Red chilly and
Curry leaves.
Procedure
Cut bitter gourd into 1inch long pieces.
Add salt and keep it aside. Chop onions
and grind with garlic and make a fine paste.
Squeeze the bitter gourd well and fry it
on a medium flame till it is reddish brown
and keep it aside. Put oil in a kadai. Splutter mustard chana dal, red chillies and curry leaves . Add the ground onion paste. Fry the paste till it is brown. Now add the fried bitter gourd pieces.Mix and fry well add salt as per taste. Karathe different style upkari is ready. - Jak na to + styl

Looks tasty...goes well with hot rice & dollop of ghee😋. Only doubt is, is there not a need to add tamarind or amchur powder?
