Aperture priority is great when lighting is generally static and isn’t changing rapidly. I generally shoot Av, but jump to manual if I’m shooting sports or shows. Never use spot metering or AE Lock, it’s always been convoluted tech. If you’re gonna put in all that effort to focus and recompose just for exposure, you might as well just shoot manual.

AP is just one of the modes, you use what you need based on the photos being taken. If you understand photography and how an image is made you will know what settings to use.

Recently, I use Canon 800D at an indoor event. Complicated lighng. Relying on advice from some photographers, I set my camera to Av mode.
95% of my 600 photos gone blurried. A true diaster.
    WHY?
AV mode : you choose aperture, to define Depth Of field. And YOU LET THE CAMERA CHOOSE SHUTTER SPEED AND ISO. But alas, camera is not smart enough to do the jobs. It lowers shutter speed too low ( 1/8, 1/12, while you use 50mm lense !!!) .
So the fist thing you must do after choosing Av mode is open MENU. In ISO option: choose Auto ISO , ant set the range ( from 200 to 6.800 for example ). The second thing is the more important is set MINIMUM SHUTTER SPEED. It depends on the lense on your camera . BUT CANON 800D HAVE NOT MINIMUM SHUTTER SPEED FUNCTION , SO THE CAMERA FREELY SET SHUTTER SPEED AT IDIOTIC VALUES .
High end camera Canon R has 2 functions , AUTOISO AND Minimum shutter speed , so it works OK.
BUT , theoretically AV MODE IS FOR AMBIENT EXPOSURE , NOT FOR MODEL EXPOSURE.
If there is a model , there is 2 different exposure at the same time. For the model, Flash is principal souce of light, not ambient lighting ! (i.e not Av mode ) .
FOR WHAT PURPOSE , AV MODE :??
For depth of Field , that meant for blur the background. NOT FOR FASTEST WAY TO set exposure in complicated lighting situation.
Manual mode + AUTO ISO is best option . You choose the deep of field you want, you choose shutter speed depend on your lense and motion of your subject. You let the camera choose the ISO . It fast , effecient .
AV mode can produce a lot of blurred photos. This can not repair in post processing. An over or under exposure photos can be repair in post. A grainy photo can repair easily in post but a blurred one is never.
BEFORE CHOOSE AV MODE , CHECK MENU OF YOUR CAMERA FIRST.
NOT ALL CAMERA CAN DO THE JOB.

Just found out that my canon 77d doesn't have a minimum shutter speed option. Seems like a pretty basic feature so I'm a bit confused why they wouldn't offer it; guess I should be shooting in manual to learn as a beginner anyways.
