  • I go out on the western kingfisher with capt Jonny while traveling the west coast of Ireland. We catch mackerel and pollock and I cook it up at a lake house.

    Mackerel is an oily fish and thus verry good for smoking. That is how you usally find them here in Europe. Great tasting fish and verry versatile. Well done Wil.

      Hey Pete yes on the black pudding, but peat is the refined version of turf, I got corrected a few Times calling turf peat. That was in fact turf.

    Great video. I travel with my Havalon filet knife. It's got replacement blades so it's never dull and is easy to travel with. I've been stuck with a dull knife way too many times!
    Also, any time I have fish on the grill I also grill the lemon. The sugars caramelize and gives it a great fresh sweet and sour flavor and is a nice way to add flavor.

    I love black pudding with seafood! Can't believe I've never tried it smoked though, sounds great
    Also I think rapeseed oil is called canola oil in the US

      It is! I didn’t realize that. It wasn’t my favorite. I would never have paired the black pudding with the pollock had I not eaten it with scallops the night before.

    All I could think about when you were bringing up those strings of mackerel was where are the predator fish. They are the finest bait that swims. Really cool episode. Kind of surprised you said the pollack was mushy. I always thought that cod, haddock and pollack would have firm fillets coming out of cold water. I thought they came out of the pan in ok shape.

      I was a bit aggressive with them resulting in the fillets falling apart a bit. I should have had a lower heat. And the fish was a bit mushy because it wasn’t iced on the boat. How you treat your catch right away dictates a lot in its quality.

      I do like oilier fish personally but that pollock was incredible. In ny you can catch cod in December. I did it once… never again

      @@CookingWithClams Nice with the sea beets ( do not know if we have them in Sweden and I’ve haven’t seen the sea for 5-6 years now so no chance of foraging 😢) Think mackerel are a underestimated fish with a “bait” status and in recent years the restaurants tried to fancy up the fish and a new favourite seems to be to serve it with rhubarb compote ( haven’t tried it!) 😘🙌🏼

    Nice to see the CLAM FAM chilling, this was another sweet episode Clams Master Will, I told my twin brother Dishes with Darren to look you up and KWWM and he did, he is loving the crew too lol, I knew he would, I liked the pollack dish minus the blood sausage, but to each their own lol, loved the scenery too, and yep those kiddos were pumped!!! 🙂, as always stay safe, stay awesome out there y'all 🙂

    Hey Will, another great video! Mackerel is great specially the vinegar marinated sushi. The kids had a blast lol

    Will thank you so much for harping on Kerrygold. I have started using it and it is well worth the 2 dollars extra on price. Sooooo creamy and delicious and really brown things up nice with that beautiful golden color. I usually start with oil and finish with a tab of Irish tongue fuck. Thanks again

    Cooking like it should be ! Without all those Asian spices, and ingredients which over cover the natural fish taste! Simple and perfect !

      It’s a very long story but basically the quota had been reached. So it was an illegal fish. But Ireland had sold fishing rights to England and Spain.
