Mackerel is an oily fish and thus verry good for smoking. That is how you usally find them here in Europe. Great tasting fish and verry versatile. Well done Wil.

Great video. I travel with my Havalon filet knife. It's got replacement blades so it's never dull and is easy to travel with. I've been stuck with a dull knife way too many times! Also, any time I have fish on the grill I also grill the lemon. The sugars caramelize and gives it a great fresh sweet and sour flavor and is a nice way to add flavor.
How fun to be able to fish and cook such a delicious meal for your family. They really appreciate your skill in the kitchen. Loved every minute of this video.

I love black pudding with seafood! Can't believe I've never tried it smoked though, sounds great Also I think rapeseed oil is called canola oil in the US
It is! I didn’t realize that. It wasn’t my favorite. I would never have paired the black pudding with the pollock had I not eaten it with scallops the night before.
All I could think about when you were bringing up those strings of mackerel was where are the predator fish. They are the finest bait that swims. Really cool episode. Kind of surprised you said the pollack was mushy. I always thought that cod, haddock and pollack would have firm fillets coming out of cold water. I thought they came out of the pan in ok shape.
I was a bit aggressive with them resulting in the fillets falling apart a bit. I should have had a lower heat. And the fish was a bit mushy because it wasn’t iced on the boat. How you treat your catch right away dictates a lot in its quality.
@@CookingWithClams Nice with the sea beets ( do not know if we have them in Sweden and I’ve haven’t seen the sea for 5-6 years now so no chance of foraging 😢) Think mackerel are a underestimated fish with a “bait” status and in recent years the restaurants tried to fancy up the fish and a new favourite seems to be to serve it with rhubarb compote ( haven’t tried it!) 😘🙌🏼
