  • Prawns tossed in a fiery and garlicky gravy is what you need when you want to treat your taste buds with something nice and simple!
    PRAWNS CHILLI GARLIC
    Ingredients
    16-20 large prawns, peeled and deveined
    ¼ cup sesame oil
    1½ tbsps finely chopped garlic
    1 tbsp finely chopped ginger
    1/3 cup red chilli paste
    1 ½ tbsps chopped coriander steams
    4 green chillies, slit
    2-3 fresh red chillies, slit
    5-6 spring onion bulbs, chopped
    ¼ cup chopped fresh coriander leaves
    2 tbsps red chilli sauce
    1 tbsp green chilli sauce
    2 tsps light soy sauce
    2 medium green capsicums, seeded and cut into thick strips
    Salt to taste
    1 tsp castor sugar
    2 tbsps cornflour slurry
    2-3 tbsps chopped spring onion greens
    Spring onion juliennes for garnish
    Method
    1. Heat sesame oil in a non-stick pan, add garlic, ginger and sauté for a minute.
    2. Add red chilli paste, mix and sauté till oil separate. Add coriander steams, green chillies, fresh red chillies, and sauté for 2-3 minutes.
    3. Add spring onion bulbs, coriander leaves, mix and cook for 3-4 minutes. Add red chilli sauce, green chilli sauce, soya sauce and mix well.
    4. Add capsicum, salt, castor sugar and cook for a minute. Add cornflour slurry and mix well.
    5. Once the mixture comes to a boil, add prawns, mix and cook for 1-2 minutes. Add spring onion greens and cook for a minute.
    6. Transfer on a serving plate, garnish with spring onion juliennes and serve hot.
