- The genuine, ancient "Gachamiga" recipe from the province of Alicante in eastern Spain.
I hope you are inspired to try this wonderfully simple, traditional, festive dish "Gachamiga" from Villena, cooked, as always, just like the locals!
INGREDIENTS (for two people)
100 ml oil
(optional: 2 slices of pork belly and 4 thin pork sausages)
a smallish head of garlic
4 or 5 very heaped tablespoons of bread flour.
salt
500 ml water

So it is a kind of pan bread eaten on more conventional bread? How is the internal consistency of this? More baked or liquidy dough like?
I'm sorry to have missed your comment Constantin. Great question! The answer is: Somewhere in between. It obviously has nor risen like bread but it is not doughy either. More like a French omelette.

Perhaps there are regional differences. In Villena, that is a gachamiga.
@@Petespans Don't take it personally. That comment is the one that a neighbour makes to another neighbour, regardless of the actual quality of it. And it is such a "family recipe only" dish that everyone thinks their versions are the best.
