I haven't seen this way of making stamppot before, but it looks legit! I'm definitely going to add garlic and onions next time I make it! Btw, sometimes I'm in a rush and I get a microwave stamppot from the supermarket, I often add garlic powder and a bit if butter before blasting it.

I think momo is a great dish to represent Nepal with, as it is a pure Nepali dish that originated from Nepal. Momo comes from Nepal during the 14th century. Even going to restaurants you’ll be sure to see lots of momo options on the menu. But I also love dal bhat.❤️

I understand that you went for crêpes, and not our actual national dishes which tend to take a long time, however one big thing with crêpes is that we like them as thin as possible, and maybe with a bit of liquor in the batter (rum>>>) :) also, there's nothing wrong with the toppings you used, but we generally enjoy stuff like nutella, jams, caramel, melted butter/sugar/lemon juice, or basically any sweet spread that you like! I also recommend trying galettes, the savory variant, made with buckwheat, many brittons will tell you it's the real deal

Peruvian ceviche doesn't have avocado or jalapeños. That was Mexico way of making that dish. Just letting you know as a fan, Peruvian ceviche is made of fish, shrimp, cilantro, onions, ginger, choclo (corn) and sweet potatoes
