- Hi everybody and welcome to my kitchen! It is the day and I am so excited, in this series I will be sharing you recipes that are very close to my heart, it's all going to be about Peruvian recipes and what best way to start than with a delicious appetizer, Papa a la Huancaina.
For Peruvian recipes a lot of the ingredients are native to Peru, therefore they can be tricky to find outside of South America, so my version is homemade but with easy ingredient substitutions

Recipe:
500g potatoes
1 Onion
4-5 Aji amarillos (or 1 yellow birds eye chillies and other yellow peppers)
2-3 cloves of garlic
Garnish
Boiled eggs
Black Olives
Iceberg Lettuce

I'm not Peruvian but my sister-in-law is this was my favorite dish she made. She is beginning stages of alzheimers not sure if I spelled that right but makes me sad her memory will not possibly be able to give a recipe so glad I can make it myself.

Peruvian food is the best!
Lol! I'm not Peruvian but it's my favorite Latin American cuisine. I first had this dish many years ago in Los Angeles at a restaurant called Inca's. I fell in love with it!
There is something so special about it, you don’t need to be Peruvian to enjoy the delicious cuisine, hopefully you’ll get a chance to try to make it yourself some day 😄 if you have questions or anything you know where to find me!
I have never tried Peruvian dish but now I am interested in Peruvian dishes. The sauce is looking so creamy and delicious. Will try to make.

Omg when I visited Peru, this was one of my favorite dishes there! And I 100% agree, Peruvian food is some of the best I've ever had. I wish I could make this...but the aji aramillo isn't available here 😫. I'll just live vicariously thru you!

If they don't have it, it's not Peruvian.Lol.Cebiche,papa a la huancaina, arroz con pollo are Peruvian Flag dishes.

I had a friend who made this and antecuchos. It was so good!
Oh that's so awesome! They do go well together. My dad used to make anticuchos, I have to say I haven't made them myself before, I really want to but I am finding it difficult to get the right type of aji to make the marinade. I'm trying to grow my own, so if I am successful I'll definitely do a recipe for them 😁

I'm married to a Peruvian. In trying to learn how to make Huancaina I've found there are two factions...one says it must have garlic and onion and the other say no garlic and onion. You can try it both ways to see what you like.
That's interesting, I've never heard of no onion/garlic... So its literally just the peppers, cheese and crackers? I can't help but feel it would be lacking something, but can't knock it until I try it! 😁
@MannysMadeatHome yeah my mother in law is universally considered a wonderful cook doesn't put garlic and onion. I'm with you though, as an amateur cook garlic and onion seems to add more flavors.

You are totally right, and this is exactly what I said in the video, unfortunately Aji Amarillo is not so easy to find where I live so I like to share with my viewers how they can still make this dish (or as close as possible) with the ingredients they have available to them 🥰
